It’s become such a fashionable beverage that, last summer, the New York Post ran a story about how Victoria’s Secret models were flocking to Cha Cha Matcha, a hipster spot fluent in the preparation of various matcha-based miracle potions. A search for where to get “matcha” in New York, New York on Yelp yielded some 1400 plus results. Even mass market coffee purveyors like Starbucks have made matcha their mantra, with a vast range of offerings to cash in on the craze.
Domestic Process: This is a very simple process. It involves repeated steeping of tea in hot water and the disposal of the water (you may use this tea to serve those who don’t mind having caffeinated tea). The more you repeat the process, the less caffeine there will be left in the tea, but the same is true of the taste and flavor. Basically, don’t overdo it. Two or three steepings are probably safe. After all, you do want tea and not plain, hot water, right?
Koicha, or thick tea, requires significantly more matcha (usually about doubling the powder and halving the water): approximately 3.75 grams (amounting to 3 heaping chashaku scoops, or about one teaspoon) of matcha and approximately 40 ml (1.3 oz) of hot water per serving, or as many as six teaspoons to 3/4 cup of water. Because the resulting mixture is significantly thicker (with a similar consistency to liquid honey), blending it requires a slower, stirring motion that does not produce foam. Koicha is normally made with more expensive matcha from older tea trees (exceeding thirty years) and, thus, produces a milder and sweeter tea than usucha; it is served almost exclusively as part of Japanese tea ceremonies.
The reason that green tea has more health benefits attached to it than black tea is due to the processing. Black tea is processed in a way that allows for fermentation whereas green tea’s processing avoids the fermentation process. As a result, green tea retains maximum amount of antioxidants and poly-phenols the substances that give green tea its many benefits.
Flavan-3-ols, the type of flavonoids found in green tea and other teas, provide many of the anti-aging effects of green tea. Catechins in various types of teas are the polyphenols that seem to have the most potent antioxidant effects, according to Natural Standard, the leading and most respected reviewer of herbal compounds. And not all the science has been favorable to tea. A report in the March 1 edition of The New England Journal of Medicine looking at green tea consumption in humans, found no effect on stomach cancers once adjustments were made for other factors that could affect risk. Those other factors included sex, age, history of stomach ulcer, use of tobacco or alcohol, and other dietary habits.
Green tea also seems to boost physical performance, increase exercise endurance, and decrease reaction time, and there are many, many such studies showing these effects from caffeine, although other ingredients in green tea may aid this effect. Caffeine, and green tea’s, ability to mobilize fatty acids in fat tissue to make them more easily available for use as energy also seems to aid physical performance. In one study, caffeine was shown to significantly increase physical performance (exercise endurance and exertion). The antioxidants in green tea may also help prevent tissue damage during physical exertion as well.
Several large, population-based studies show that people who regularly drink black or green tea may be less likely to have heart attacks and strokes. However, people who drink tea tend to be different from people who don't drink tea. "We can't quite disentangle whether it's their tea drinking or something else those people are doing that lowers their risk of cardiovascular disease," explains Dr. Sesso. "Some experts believe that tea may have cardiovascular benefits, but it's not considered a slam-dunk proposition."
Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan. The shading technique imparts a sweeter flavor, and produces a particularly rich color thanks to the higher amounts of chlorophyll in the shaded leaf. Gyokuro tea is associated with the Uji region, the first tea-growing region in Japan. It is often made using smaller-leaf cultivars of the tea plant.
In 1994, Burke International registered the name "Rooibos" with the US Patent and Trademark Office, thus establishing a monopoly on the name in the United States at a time when it was virtually unknown there. When the plant later entered more widespread use, Burke demanded that companies either pay fees for use of the name, or cease its use. In 2005, the American Herbal Products Association and a number of import companies succeeded in defeating the trademark through petitions and lawsuits; after losing one of the cases, Burke surrendered the name to the public domain.
