According to the National Cancer Institute, the polyphenols in tea have been shown to decrease tumor growth in both animal and laboratory studies. Researchers believe that it is the high level of polyphenols in tea that help kill cancerous cells and stop them from growing, although the exact mechanism by which tea inhibits and prevents cancerous cells is uncertain.
Koicha, or thick tea, requires significantly more matcha (usually about doubling the powder and halving the water): approximately 3.75 grams (amounting to 3 heaping chashaku scoops, or about one teaspoon) of matcha and approximately 40 ml (1.3 oz) of hot water per serving, or as many as six teaspoons to 3/4 cup of water. Because the resulting mixture is significantly thicker (with a similar consistency to liquid honey), blending it requires a slower, stirring motion that does not produce foam. Koicha is normally made with more expensive matcha from older tea trees (exceeding thirty years) and, thus, produces a milder and sweeter tea than usucha; it is served almost exclusively as part of Japanese tea ceremonies.

The leaves are treated briefly with steam heat within hours of plucking to both halt the oxidation process and bring out the rich green color of the shade-grown tea leaves even more. This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Matcha is treated with a light-controlled process in the last few weeks before harvest. Shading the green tea plants stimulates an increase in the chlorophyll production in the leaves and gives Matcha Green Tea its rich emerald color. Researchers from the Netherlands confirmed in a recent study that two green tea compounds, L-theanine and caffeine, can significantly boost levels of attention and alertness, building on what is already known about the brain benefits of green tea. The drink is less likely to make you jittery and anxious than other energy-boosting drinks, because it contains lower levels of caffeine than other teas or coffee. In another study published in the American Journal of Clinical Nutrition, researchers discovered that drinking just one cup of green tea a day made people age 55 and older 38 percent less likely to experience a decline in their mental abilities. Drinking a second cup daily made them 54 percent less likely to show mental declines.

When my tea arrived in the mail, I was hyped. Clearly, packaging is a major key for fancy weight loss teas. Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan.[60] The shading technique imparts a sweeter flavor, and produces a particularly rich color thanks to the higher amounts of chlorophyll in the shaded leaf. Gyokuro tea is associated with the Uji region, the first tea-growing region in Japan. It is often made using smaller-leaf cultivars of the tea plant.[61]
An animal study published in 2009 in “Phytomedicine” found that green rooibos tea helped regulate glucose metabolism, preventing increases in fasting blood glucose levels during the course of the five-week study. This effect is a result of aspalathin, a compound found in green rooibos. Poor glucose tolerance and high fasting glucose levels are signs of type-2 diabetes and are common in obesity. The study suggests rooibos tea may help keep blood glucose levels in check, preventing sharp spikes and falls that can trigger symptoms of hunger and possibly leading to lower calorie consumption.

I am not a tea drinker.....BUT this is the Best Tea I have ever had, ever! It does not need sugar or milk but I'm sure you could add these items if you preferred. Scientists at Tufts University compared the “ORAC” (Oxygen Radical Absorbance Capacity, a measurement of the total antioxidant power of foods and other chemical substances) of black and green tea and 22 fruits and vegetables, and found green tea brewed for five minutes outranked even so-called superfoods on the produce list. And EGCC, a catechin found in tea (and shows highest levels in green tea) has been shown to protect the DNA in cells from cancer-inducing changes. Hot water is added slowly while whisking briskly in a W pattern with a bamboo whisk called a chasen until smooth with a foamy froth on top.
