Generally, lower-quality green teas are steeped hotter and longer while higher-quality teas are steeped cooler and shorter, but usually multiple times (2-3 typically). Higher-quality teas like gyokuro use more tea leaves and are steeped multiple times for short durations. Steeping too hot or too long results in the release of excessive amounts of tannins, leading to a bitter, astringent brew, regardless of initial quality. The brew’s taste is also affected by the steeping technique; two important ones are to warm the steeping container beforehand to prevent the tea from immediately cooling down, and to leave the tea leaf in the pot and gradually add more hot water during consumption.[citation needed]
All that being said, it should come as no surprise that I fell victim to the active marketing campaigns of one of the year’s biggest trends: fitness teas. You know what I’m talking about: stars and influencers like Kylie Jenner, Catherine Giudici Lowe, and Vanessa Hudgens are touting the successes of their respective experiences with fitness teas. These teas (by various brands) claim to eliminate bloat, cleanse your insides, and detoxify your organs. They claim to help you lose weight and curb cravings. Seriously? I thought as I scrolled through ad after ad. Sign. Me. Up.
To make green tea, the leaves are quickly steamed or heated to stop oxidation, the chemical process that causes browning. To make black tea, the leaves are crushed, torn, curled, or rolled and allowed to oxidize before being dried. This additional processing step degrades some of the flavonoids. As a result, black tea has slightly lower amounts of flavonoids than green tea.
Because matcha is a powder made from ground tea leaves, it is not steeped in the traditional way. To prepare matcha, add between ½ teaspoon and 1 teaspoon of matcha green tea powder to a cup. Fill a kettle with water and heat to just short of boiling. Pour 6 ounces of the steaming water into the cup of matcha powder. Then, blend vigorously with a tea frother or bamboo matcha whisk, until the top is nice and foamy. You may need to experiment with the proportions of water and matcha powder to find your favored strength.

Green tea also seems to boost physical performance, increase exercise endurance, and decrease reaction time, and there are many, many such studies showing these effects from caffeine, although other ingredients in green tea may aid this effect. Caffeine, and green tea’s, ability to mobilize fatty acids in fat tissue to make them more easily available for use as energy also seems to aid physical performance. In one study, caffeine was shown to significantly increase physical performance (exercise endurance and exertion). The antioxidants in green tea may also help prevent tissue damage during physical exertion as well.
Japanese green teas have a thin, needle-like shape and a rich, dark green color. Unlike Chinese teas, most Japanese teas are produced by steaming rather than pan firing. This produces their characteristic color, and creates a sweeter, more grassy flavor. A mechanical rolling/drying process then dries the tea leaves into their final shape.[54] The liquor of steamed Japanese tea tends to be cloudy due to the higher quantity of dissolved solids.[56]

A Medline search of articles on tea and its health effects yields scores of reports in the medical and scientific literature in the past several years. What emerges is a significant body of literature from animal studies showing that green tea may prevent heart disease and cancer. Other studies have also suggested that it may help avert osteoporosis, a condition characterized by fragile bones, and that it might have beneficial effects on skin when applied topically.
Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
