Tea culture of Korea was actively suppressed by the Japanese during the Japanese forced occupation period (1910‒1945), and the subsequent Korean War (1950‒1953) made it even harder for the Korean tea tradition to survive.[70] The restoration of the Korean way of tea began in the 1970s, around Dasolsa.[70] Commercial production of green tea in South Korea only began in the 1970s,.[71] By 2012 the industry was producing 20% as much tea as Taiwan and 3.5% as much as Japan.[72][73] Green tea is not as popular as coffee or other types of Korean teas in modern South Korea. The annual consumption per capita of green tea in South Korea in 2016 was 0.16 kg (0.35 lb), compared to 3.9 kg (8.6 lb) coffee.[74] Recently however, as the coffee market reached saturation point, South Korean tea production doubled during 2010‒2014,[75] as did tea imports during 2009-2015,[76] despite very high tariff rate (513.6% for green tea, compared to 40% for black tea, 8% for processed/roasted coffee, and 2% for raw coffee beans). 

The available research on matcha includes a small pilot study published in the International Journal of Sports Nutrition and Exercise Metabolism in 2018. For the study, women consumed matcha green tea beverages before a 30-minute brisk walk. Researchers found that matcha consumption enhanced fat oxidation (the breakdown of fat into smaller molecules to be used for energy) during the walk.
It depends not only on the processing method the tea producers use, but also on the cultivation practices the tea growers use. What time of year is the tea plucked? How is the plant pruned? What parts of the plant are plucked? Are the plants treated with chemicals or are they organically grown? What kind of heat is applied to the tea leaves to stop oxidation? How are the tea leaves shaped, rolled and dried? Are the leaves left whole or cut in smaller pieces?
We’re wary of any trend that involves detoxing with just a drink. By now, we’re all pretty aware that liquid diets can’t sustain our active bodies for very long, and most of the drinks celebrities swear by have little actual detoxifying effects. But a teatox, or tea detox or tea cleanse, is a gentler approach to the whole idea, namely because it involves adding a few herbal cups to your existing, healthy diet—instead of replacing meals entirely.
I never told anyone this, and by now, you’re probably thinking I’m a fool. But can I just say that I actually thought if I followed the commenters (about how long to steep) that I’d be ok? Matcha is green tea that has been specially grown and processed. Twenty days before harvest, the leaves are shaded from direct sunlight, which amps up the chlorophyll levels (and accounts for that Kermit green color) and increases the production of the amino acid L-Theanine, which is thought to promote relaxation even as the tea gives you a caffeine jolt. The leaves are hand-picked and laid out to dry. Once they are rid of their veins and stems, they’re stone-ground into what is finally matcha.
"It's only in the last 10 year that Western science has tried to look at antioxidant activities of tea," says Dave Ringer, PhD, scientific program director at the ACS. "It's a young science. Generally, it is felt that tea can inhibit the initiation of cancer and delay its progression in animal studies. But we don't really have large well-controlled epidemiological studies to look at this yet [in humans], because you need to correct for the effects of other dietary components."
But matcha didn’t skyrocket to celeb status on health merits alone. As we said back in 2011, wheatgrass is healthy, too, but we’re not seeing it in every other bakery and café. So-called "detox" teas have been popular for years, primarily among people who frequent health-food stores, or consult with alternative practitioners. These days, though, they've become big business, and a handful of celebrities are touting their weight-loss benefits on social media. In a way, detox teas have become the liquid version of waist trainers–the before and after results are often dramatic, and their celeb backing generates buzz, but you may be wondering: Do they really work, and are they safe? Before you plunk down your hard-earned money and start sipping, here are five things you should know.
A stone mill consists of two granite parts, with a slight opening in the middle called "Fukumi." The tea is funneled in from the top, filling in this small space, and pushed out gradually. Though each stone mill can only grind up to 30-40g of Matcha per hour (that's approximately one tin), only these mills made of granite are able to preserve the color, flavor, and nutritional components of Matcha.
Day 3: As I started to make my 5th cup in 3 days, my best friend said, “Ab, I really don’t think you should be drinking so much of this stuff. Why don’t you just stick to the recommended amount?” I responded with “It’s just TEA — what’s the worst that could happen?” On day 3, I learned. I had decided to give up coffee during my 28 days, both as a way to save my sanity and excretory system and as a way to wean myself out of my coffee habit. That was really stupid. By day 3, I was experiencing a horrifying caffeine headache and a rough case of the spins. I was also literally exhausted and finally feeling the ~desired effects~ of the detox (frequent trips to the bathroom, to put it lightly), so I was dealing with an excess of that on top of my other horrible side effects. Do I blame the tea? Not even a little. I blame myself for overindulging in too much of a good thing. From there on out, I decided to follow the rules.
Indigenous to the Western Cape of South Africa, rooibos (Aspalathus linearis) is a shrub with long, needle-shaped leaves that turn red upon fermentation. When you drive through the countryside north of Cape Town, you see rooibos everywhere. Rooibos is a traditional beverage of the native Khoi people of the Cape area, though it has become more popular in recent years due to word spreading about its high antioxidant value. Traditionally, the native people harvest the leaves, bruise them with hammers, ferment them and dry them. The result is a red, astringent tea that refreshes and does not cause jitters.
It also appears to contain more EGCG. ConsumerLab.com, an independent testing group, tested matcha products in 2015 and found that matcha provided 17 mg to 109 mg of EGCG per serving. By comparison, the average brewed green tea provides 25 to 86 mg per serving. While matcha powders contained more catechins per gram than brewed green tea, it was substantially more expensive: The lowest cost matcha powder was available at the time for $2.31 for 200mg of EGCG, compared to 27 cents for the same amount from brewed green tea. Compared to the powders, matcha in tea bags provides significantly less EGCG.
The Alzheimer's Society commented that "this study adds to previous research that suggests green tea might help to reduce the risk of Alzheimer's disease. However, the researchers used a far higher dose of the active green tea chemical than would ever be found in the human body. More research is needed to see whether green tea is protective at a much lower dose, and to understand the mechanism involved."
Dr Nortier cultivated the first plants at Clanwilliam on his farm Eastside and on the farm Klein Kliphuis. The tiny seeds were very difficult to come by. Dr Nortier paid the local villagers £5 per matchbox of seeds collected. An aged Khoi woman found an unusual seed source: having chanced upon ants dragging seed, she followed them back to their nest and, on breaking it open, found a granary.[12] Dr. Nortier's research was ultimately successful and he subsequently showed all the local farmers how to germinate their own seeds. The secret lay in scarifying the seed pods. Dr Nortier placed a layer of seeds between two mill stones and ground away some of the seed pod wall. Thereafter the seeds were easily propagated. Over the next decade the price of seeds soared to an astounding £80 a pound, the most expensive vegetable seed in the world, as farmers rushed to plant rooibos. Today, the seed is gathered by special sifting processes. Dr Nortier is today accepted as the father of the rooibos tea industry. Thanks to his research, rooibos tea became an iconic national beverage and then a globalised commodity. Rooibos tea production is today the economic mainstay of the Clanwilliam district. In 1948 The University of Stellenbosch awarded Dr Nortier an Honorary Doctorate D.Sc (Agria) in recognition for his valuable contribution to South African agriculture.

Matcha is a type of green tea made by taking young tea leaves and grinding them into a bright green powder. The powder is then whisked with hot water. This is different from regular green tea, where the leaves are infused in water, then removed. Drinking brewed green tea “is a bit like boiling spinach, throwing away the spinach and just drinking the water,” says Louise Cheadle, co-author of The Book of Matcha and co-owner of the tea company teapigs. “You will get some of the nutrients, but you’re throwing away the best bit.” With matcha, you’re drinking the whole tea leaves.

Green tea contains significant amounts of flavonoids, antioxidants that protect against heart disease by slowing the breakdown of LDL cholesterol, preventing blood clots, and improving blood vessel function. The benefits of green tea also include associations with lower cholesterol and lower rates of artery blockages. People who drink a cup or two a day have a 46 percent lower risk of developing narrowed arteries. Upping that to three cups a day lowers the risk of having a heart attack by 43 percent and of dying from a heart attack by 70 percent. It can even help prevent a second heart attack. In a study of 1,900 patients recovering from heart attacks at Beth Israel Deaconess Medical Center in Boston, the death rate among patients who drank at least two cups of tea a day was 44 percent lower than among non-tea drinkers.
