To make green tea, the leaves are quickly steamed or heated to stop oxidation, the chemical process that causes browning. To make black tea, the leaves are crushed, torn, curled, or rolled and allowed to oxidize before being dried. This additional processing step degrades some of the flavonoids. As a result, black tea has slightly lower amounts of flavonoids than green tea.
Matcha leaves are grown on green tea bushes kept under shade. The shade increases the amount of chlorophyll content in the leaves, which is what makes them bright green and full of nutrients. The leaves are picked by hand and the stems and veins are removed. According to Cheadle, the leaves are traditionally ground by granite stones into a super fine powder. “It takes an hour to grind the leaves, and it’s done in the dark to protect the nutrients,” she says.
A study suggests that theanine found in matcha tea acts as a neurotransmitter. It exerts a calming effect on the brain without causing any drowsiness. This soothing effect helped the Buddhist monks in maintaining deep concentration during their meditation sessions and was the main reason behind its popularity. Another study has revealed the anti-stress effects of theanine present in this tea, which assists in reducing the physiological and psychological stress responses by inhibiting the neuron excitation. Matcha tea is also believed to boost memory and concentration.
According to science, matcha is something of a miracle supplement. For one, it makes you feel good. One recent study examined the effects of the phytochemicals in green tea on mood and cognition. The combo of caffeine (present in most green teas) and L-theanine, an amino acid found in some teas, were found to “improve performance in attention-switching tasks and alertness, but to a lesser extent than caffeine alone,” partly because of how L-theanine chills you out.
In China during the Tang Dynasty (618–907), tea leaves were steamed and formed into tea bricks for storage and trade. The tea was prepared by roasting and pulverizing the tea, and decocting the resulting tea powder in hot water, then adding salt.[2] During the Song Dynasty (960–1279), the method of making powdered tea from steam-prepared dried tea leaves, and preparing the beverage by whipping the tea powder and hot water together in a bowl became popular.[3]
Over a thousand years ago, matcha came to Japan as an aid to meditation practice. During long hours of sitting, monks would drink matcha to remain alert yet calm. Modern science has recently confirmed the lessons of centuries of tradition. Matcha is rich in L-Theanine, a rare amino acid that actually promotes a state of relaxation and well-being by acting upon the brains functioning. While stress can induce beta waves an excited, more agitated state, L-Theanine creates alpha waves, which lead to a state of relaxed alertness. And while L-Theanine is common in all tea, matcha may contain up to five times more of this amino acid than common black and green teas.
One of the biggest buzz words in nutrition, antioxidants are naturally occurring chemical compounds that prevent aging and chronic diseases. Nowadays, a variety of fruits and vegetables are lauded for their antioxidant properties, leading to a host of products with all kinds of claims. But matcha is unparalleled in comparison. Firstly, matcha is packed with exponentially more antioxidants according to the latest innovation in antioxidant research.
Although numerous claims have been made for the health benefits of green tea, human clinical research has not provided conclusive evidence of any effects.[2][7][11] In 2011, a panel of scientists published a report on the claims for health effects at the request of the European Commission: in general they found that the claims made for green tea were not supported by sufficient scientific evidence.[7] Although green tea may enhance mental alertness due to its caffeine content, there is only weak, inconclusive evidence that regular consumption of green tea affects the risk of cancer or cardiovascular diseases, and there is no evidence that it benefits weight loss.[2]
Short-term studies have shown that drinking tea may improve vascular reactivity—a measure of how well your blood vessels respond to physical or emotional stress. There's also evidence that drinking either black or green tea may lower harmful LDL cholesterol levels. Blood pressure may also dip slightly in people who drink tea, but results from these studies have been mixed.
Dr Nortier cultivated the first plants at Clanwilliam on his farm Eastside and on the farm Klein Kliphuis. The tiny seeds were very difficult to come by. Dr Nortier paid the local villagers £5 per matchbox of seeds collected. An aged Khoi woman found an unusual seed source: having chanced upon ants dragging seed, she followed them back to their nest and, on breaking it open, found a granary.[12] Dr. Nortier's research was ultimately successful and he subsequently showed all the local farmers how to germinate their own seeds. The secret lay in scarifying the seed pods. Dr Nortier placed a layer of seeds between two mill stones and ground away some of the seed pod wall. Thereafter the seeds were easily propagated. Over the next decade the price of seeds soared to an astounding £80 a pound, the most expensive vegetable seed in the world, as farmers rushed to plant rooibos. Today, the seed is gathered by special sifting processes. Dr Nortier is today accepted as the father of the rooibos tea industry. Thanks to his research, rooibos tea became an iconic national beverage and then a globalised commodity. Rooibos tea production is today the economic mainstay of the Clanwilliam district. In 1948 The University of Stellenbosch awarded Dr Nortier an Honorary Doctorate D.Sc (Agria) in recognition for his valuable contribution to South African agriculture.
Rooibos tea can be useful for small children who suffer from colic or stomach pain. You may add some sweetened milk to farm direct red rooibos tea to improve the flavor and make it more palatable. This is actually why rooibos tea is a well-known health aid. Many South African women claimed that this plant was very soothing for their colicky infant.

Day 7: I had a formal event to go to on Day 7, and I had a flowy dress all picked out. My friend convinced me to try a much tighter dress at the last minute, and I kid you not when I say that my stomach felt flatter in this dress than it has felt in a long time. Probably some combination of all three (but let’s be realistic, I had just had McDonald’s that very morning, so probably just the first two).

An animal study published in 2009 in “Phytomedicine” found that green rooibos tea helped regulate glucose metabolism, preventing increases in fasting blood glucose levels during the course of the five-week study. This effect is a result of aspalathin, a compound found in green rooibos. Poor glucose tolerance and high fasting glucose levels are signs of type-2 diabetes and are common in obesity. The study suggests rooibos tea may help keep blood glucose levels in check, preventing sharp spikes and falls that can trigger symptoms of hunger and possibly leading to lower calorie consumption.
Green tea contains significant amounts of flavonoids, antioxidants that protect against heart disease by slowing the breakdown of LDL cholesterol, preventing blood clots, and improving blood vessel function. The benefits of green tea also include associations with lower cholesterol and lower rates of artery blockages. People who drink a cup or two a day have a 46 percent lower risk of developing narrowed arteries. Upping that to three cups a day lowers the risk of having a heart attack by 43 percent and of dying from a heart attack by 70 percent. It can even help prevent a second heart attack. In a study of 1,900 patients recovering from heart attacks at Beth Israel Deaconess Medical Center in Boston, the death rate among patients who drank at least two cups of tea a day was 44 percent lower than among non-tea drinkers.

About 2 weeks before harvest, farmers build structures around the plants to shade them, leaving them almost in the dark. It’s thought that this makes the leaves softer, sweeter, and brighter. After harvest, the tea leaves are quickly steamed, then dried and put into heated ovens for 20 minutes or so. Workers then remove stems, twigs, and other unneeded parts and grind the leaves into powder.
Generally, lower-quality green teas are steeped hotter and longer while higher-quality teas are steeped cooler and shorter, but usually multiple times (2-3 typically). Higher-quality teas like gyokuro use more tea leaves and are steeped multiple times for short durations. Steeping too hot or too long results in the release of excessive amounts of tannins, leading to a bitter, astringent brew, regardless of initial quality. The brew’s taste is also affected by the steeping technique; two important ones are to warm the steeping container beforehand to prevent the tea from immediately cooling down, and to leave the tea leaf in the pot and gradually add more hot water during consumption.[citation needed]

56. For the next 100 days, practice active listening. When someone is talking to you, remain focused on what they’re saying, instead of rehearsing in your head what you’re going to say next. Every day, countless people throw away valuable antioxidants and minerals. There are mixed opinions about how much green tea one should consume. The reality is one cup of green tea isn’t enough to affect your health. Some people say up to 10 cups is ideal but if you’re concerned about spending a lot of time in the bathroom you can add a green tea supplement to your diet.

Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.
