To make green tea, the leaves are quickly steamed or heated to stop oxidation, the chemical process that causes browning. To make black tea, the leaves are crushed, torn, curled, or rolled and allowed to oxidize before being dried. This additional processing step degrades some of the flavonoids. As a result, black tea has slightly lower amounts of flavonoids than green tea.
Most importantly, EGCg and other catechins counteract the effects of free radicals from the likes of pollution, UV rays, radiation, and chemicals, which can lead to cell and DNA damage. It depends not only on the processing method the tea producers use, but also on the cultivation practices the tea growers use. What time of year is the tea plucked? How is the plant pruned? What parts of the plant are plucked? Are the plants treated with chemicals or are they organically grown? What kind of heat is applied to the tea leaves to stop oxidation? How are the tea leaves shaped, rolled and dried? Are the leaves left whole or cut in smaller pieces?
contains antioxidants, including polyphenols such as epigallocatechin gallate (EGCG), which can powerfully quench damaging “free radicals,” metabolic byproducts that are chemically reactive and can damage cells. According to a study published in the European Journal of Clinical Nutrition, the polyphenols found in green tea provide six times the radical-quenching potential of those found in black tea.
But matcha didn’t skyrocket to celeb status on health merits alone. As we said back in 2011, wheatgrass is healthy, too, but we’re not seeing it in every other bakery and café. Matcha has flavor going for it—grassy, pleasantly vegetal, and slightly bitter—and a brilliant natural color that makes baked goods (like rainbow cookies) stand out from the crowd in busy bakeries (and on Instagram).
I've been a HUGE fan of matcha for two years now. I used to order matcha water from Starbucks when it used to be 87 cents. (But corporate caught on). If you're like me and Starbucks' $5 drink isn't working for you, but you still crave your matcha this is the closest thing you'll get as far as results go. I'll be honest though, through some investigation, I discovered that Starbucks put some sugar with their matcha. So no, it doesn't taste AS sweet. After a few times though and experimenting, I mix up my matcha with coconut milk and it's just as delicious. I'm also a HUGE caffeine addict. Matcha really, really does give you amazing steady energy throughout the whole day. I tell my friends it's like having all your cells slowly wake up one at a time and your whole body is revitalized. I know I sound like salesperson but that's honestly what it does for me. I used to have 7-8 cups of coffee a day. No exaggeration. I just graduated from grad school. But now I only need my one cup in the morning and it's matcha water for me for the rest of the day. Seriously, if you're looking for clean, no crash, HEALTHY, energy, try this ! You won't be disappointed. It also took me a while to figure out the serving size/ portions. I fill my 32 oz. canteen every morning and put 2-3 scoops and shake it up with ice. Some may like it lighter some may like it a little stronger but that's my regimen.
The leaves are used to make a herbal tea that is called by the names: rooibos, bush tea (especially in Southern Africa), or redbush tea (predominantly in Great Britain). The tea has been popular in Southern Africa for generations, but is now consumed in many countries worldwide. It is sometimes spelled rooibosch in accordance with the original Dutch. The tea has a taste and color somewhat similar to hibiscus tea, or an earthy flavor like yerba mate.

But when it comes to detoxification, tea alone isn’t enough for the job. “No one food, herb, or remedy has the ability to cure ailments or disease, nor does it have the ability to ‘detox’ the body,” says Manuel Villacorta, R.D, author of Whole Body Reboot: The Peruvian Superfoods Diet to Detoxify, Energize, and Supercharge Fat Loss. (This is also why you might want to hold off before trying to detox by drinking activated charcoal.)
On 17 June 2011, at Charles de Gaulle airport in Paris, France, radioactive cesium of 1,038 becquerels per kilogram was measured in tea leaves imported from Shizuoka Prefecture, Japan as a result of the Fukushima Daiichi nuclear disaster on 11 March, which was more than twice the restricted amount in the European Union of 500 becquerels per kilogram. The government of France announced that they rejected the leaves, which totaled 162 kilograms (357 lb).
Ginger Root, the underground stem, or rhizome, of the plant Zingiber officinale, has been used in many herbal traditions since ancient times. In Ayurveda, Ginger is known as the wonder herb, and it's no wonder, since Ayurveda employs Ginger for a wide variety of health applications, including digestive support. Historically, Ginger Root was also one of the most respected herbs for supporting joint health. Additionally, Ginger Root has been traditionally used to support healthy peripheral circulation; and can aid in warming up cold hands and feet, and will also promote sweating when needed.
These are some of the many benefits but the reality is one cup of tea a day will not give you all the abundant gains. The jury is out on how many cups are necessary; some say as little as two cups a day while others five cups. If you are thinking of going down this route, you may want to consider taking a green tea supplement instead (it would keep you out of the bathroom).

Tea culture of Korea was actively suppressed by the Japanese during the Japanese forced occupation period (1910‒1945), and the subsequent Korean War (1950‒1953) made it even harder for the Korean tea tradition to survive. The restoration of the Korean way of tea began in the 1970s, around Dasolsa. Commercial production of green tea in South Korea only began in the 1970s,. By 2012 the industry was producing 20% as much tea as Taiwan and 3.5% as much as Japan. Green tea is not as popular as coffee or other types of Korean teas in modern South Korea. The annual consumption per capita of green tea in South Korea in 2016 was 0.16 kg (0.35 lb), compared to 3.9 kg (8.6 lb) coffee. Recently however, as the coffee market reached saturation point, South Korean tea production doubled during 2010‒2014, as did tea imports during 2009-2015, despite very high tariff rate (513.6% for green tea, compared to 40% for black tea, 8% for processed/roasted coffee, and 2% for raw coffee beans).
Both nutritionists we spoke to agree that drinking tea when you wake up and before bed can help your system rev up and calm down, depending on which variety you choose. If you’re a tea fanatic, work in a few cups throughout the day: Unless you’re sensitive to caffeine, you can probably handle five to seven cups a day without any negative side effects, says Lagano.

Rooibos contains polyphenols that have anti-inflammatory, antiviral, and antimutagenic qualities. Polyphenols are organic chemicals that are often praised for their antioxidant capabilities. Studies suggest that regularly drinking organic red rooibos tea provides the liver with potent antioxidants, helping the organ to improve detoxification. Antioxidants act as scavengers of free radicals throughout the body, which are detrimental byproducts of cell metabolism that can cause cancer and heart diseases. Aspalathin and nothofagin are two other vital antioxidants that rooibos tea contains, making it a great beverage to boost your immune system and protect your body against all types of diseases.
Our green tea is passed through a steaming treatment before rolling. Steaming applies light heat to the leaves to help halt the oxidation process before the leaves are rolled into shape. Steaming also helps expose the fresh, grassy flavor of the leaf. Green tea leaves are not allowed to oxidize after rolling, which is why they remain light color and flavor.
The taste is of matcha is strong. Some people describe it as grass or spinach-like, and it has an umami taste. Because of this it may be sweetened to improve its palatability. One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. The first ingredient was sugar, and it also contained powdered milk, so it was essentially like hot chocolate—but with cocoa swapped for matcha—something I wouldn’t recommend. Tea experts also warn that with matcha quality is key, and it comes at a cost. In other words, high quality, fresh, pure matcha is expensive. A low price tag can be a red flag for a poor quality product. Like gyokuro, matcha is shaded before plucking. The plucked and processed leaf is called tencha. This product is then ground into a fine powder, which is matcha. Because the tea powder is very perishable, matcha is usually sold in small quantities. It is typically rather expensive. Matcha is the type of tea used in the Japanese tea ceremony. It is prepared by whisking the tea with hot water in a bowl, until the surface is frothy. If the water is too hot, the tea may become overly bitter.

The South African Department of Trade and Industry issued final rules on 6 September 2013 that protects and restricts the use of the names "rooibos", "red bush", "rooibostee", "rooibos tea", "rooitee" and "rooibosch" in that country, so that the name cannot be used for things not derived from the Aspalathus linearis plant. It also provides guidance and restrictions for how products which include Rooibos, and in what measures, should use the name "rooibos" in their branding.

Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan. The shading technique imparts a sweeter flavor, and produces a particularly rich color thanks to the higher amounts of chlorophyll in the shaded leaf. Gyokuro tea is associated with the Uji region, the first tea-growing region in Japan. It is often made using smaller-leaf cultivars of the tea plant.
