The most popular, widely consumed types of green teas hail from the places where green tea originated: China and Japan. Green teas from China and Japan have different flavor profiles based on where and how they are grown, but most distinctively how they are processed—pan fired in China and steamed in Japan. Other countries producing green tea typically take cues from China or Japan and adopt one of these country’s tea production styles.
Our green tea is passed through a steaming treatment before rolling. Steaming applies light heat to the leaves to help halt the oxidation process before the leaves are rolled into shape. "Drink tea if you enjoy it, in moderation, and not because you're taking it as a medicine," says Dr. Sesso. Stirring in a little sugar is fine, but if you add a few heaping teaspoons of sugar, you're probably canceling out tea's possible benefits, he notes. Those magical catechins also have tons of potential in helping people with heart issues. “Catechins present in green tea have the ability to prevent atherosclerosis, hypertension, endothelial dysfunction, ischemic heart diseases, cardiomyopathy, cardiac hypertrophy and congestive heart failure by decreasing oxidative stress, preventing inflammatory events, reducing platelet aggregation and halting the proliferation of vascular smooth muscle cells,” explains the author of the study, published in the Chinese Journal of Natural Medicines.

One thing to watch out for in detox teas, though, is a common ingredient—and herbal laxative—senna. “One part of detoxing is the cleansing of the intestines, and senna aids this process,” he explains. While it can be helpful as a night-time drink short-term, taking senna for too long can cause vomiting, diarrhea, electrolyte imbalance, and dehydration. If you feel stopped up, incorporate a senna tea for a few nights (Villacorta recommends Traditional Medicinals Organic Smooth Move). But stick to senna-free varieties for your habitual cup.

A book written by Lu Yu in 600-900 AD (Tang Dynasty), "Tea Classic" (simplified Chinese: 茶经; traditional Chinese: 茶經; pinyin: chájīng), is considered important in green tea history. The Kissa Yojoki (喫茶養生記 Book of Tea), written by Zen priest Eisai in 1211, describes how drinking green tea may affect five vital organs, the shapes of tea plants, flowers and leaves, and how to grow and process tea leaves.


Certain studies indicate that intake of flavan-3-ols and/or anthocyanidins found in green tea may improve glycemic control and help normalize blood sugar levels. Due to its anti-inflammatory properties, green tea is believed to be beneficial for those who are at-risk or diagnosed with type 2 diabetes. Green tea’s catechins, especially EGCG, appear to have anti-obesity and antidiabetic effects.
Green Tea comes from Camellia sinensis leaves that are immediately steamed or pan-fired rather than being exposed to air so that no oxidation occurs.   This special handling makes for a more delicate brew that is typically lower in caffeine than black and Oolong teas.  Although amounts vary, green teas are highest in polyphenols known as EGCG, which is why so many make it part of their healthy lifestyle.

If you’re a tea fanatic, work in a few cups throughout the day: Unless you’re sensitive to caffeine, you can probably handle five to seven cups a day without any negative side effects, says Lagano.
Green tea also seems to boost physical performance, increase exercise endurance, and decrease reaction time, and there are many, many such studies showing these effects from caffeine, although other ingredients in green tea may aid this effect. Caffeine, and green tea’s, ability to mobilize fatty acids in fat tissue to make them more easily available for use as energy also seems to aid physical performance. In one study, caffeine was shown to significantly increase physical performance (exercise endurance and exertion). The antioxidants in green tea may also help prevent tissue damage during physical exertion as well.
Matcha literally means "powdered tea." When you order traditional green tea, components from the leaves get infused into the hot water, then the leaves are discarded. With matcha, you’re drinking the actual leaves, which have been finely powdered and made into a solution, traditionally by mixing about a teaspoon of matcha powder with a third cup of hot water (heated to less than a boil), which is then whisked with a bamboo brush until it froths.
Domestic Process: This is a very simple process. It involves repeated steeping of tea in hot water and the disposal of the water (you may use this tea to serve those who don’t mind having caffeinated tea). The more you repeat the process, the less caffeine there will be left in the tea, but the same is true of the taste and flavor. Basically, don’t overdo it. Two or three steepings are probably safe. A stone mill consists of two granite parts, with a slight opening in the middle called "Fukumi." The tea is funneled in from the top, filling in this small space, and pushed out gradually. Unsweetened brewed green tea is a zero calorie beverage. The caffeine contained in a cup of tea can vary according to the length of infusing time and the amount of tea infused. In general, green tea contains a relatively small amount of caffeine (approximately 20-45 milligrams per 8 ounce cup), compared with black tea, which contains about 50 milligrams and coffee with 95 milligrams per cup.
Gardenias were originally found only in China and Japan, but today there are over 200 different species of gardenia, mostly hybrids, throughout the world. A growing body of evidence suggests that the health benefits of rooibos may be quite broad, including evidence that the antioxidants in the tea may reduce the risk of heart disease, and may inhibit some parameters of aging. Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.
In this traditional Japanese preparation, the powder is sifted through a fine mesh sieve and measured into a special bowl called a chawan. I absolutely LOVE this tea! I drink about 3-4 hot cups a day... with a touch of honey, a squeeze of fresh lemon and a sprig of fresh mint, it is absolutely the best! Matcha is a type of green tea made by taking young tea leaves and grinding them into a bright green powder. The powder is then whisked with hot water. This is different from regular green tea, where the leaves are infused in water, then removed. Drinking brewed green tea “is a bit like boiling spinach, throwing away the spinach and just drinking the water,” says Louise Cheadle, co-author of The Book of Matcha and co-owner of the tea company teapigs. “You will get some of the nutrients, but you’re throwing away the best bit.” With matcha, you’re drinking the whole tea leaves.

One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. The first ingredient was sugar, and it also contained powdered milk, so it was essentially like hot chocolate—but with cocoa swapped for matcha—something I wouldn’t recommend. Tea experts also warn that with matcha quality is key, and it comes at a cost. In other words, high quality, fresh, pure matcha is expensive. A low price tag can be a red flag for a poor quality product. Rooibos is being heavily hyped by producers and distributors as a new health beverage. Unlike true “tea,” it is caffeine-free and low in tannins. It contains minimal amounts of calcium, potassium, iron, zinc, magnesium and much less fluoride than found in real teas. Studies have shown that Rooibos does contain antioxidants and therefore might have some of the health benefits of green tea, but very little research has confirmed this. I found only 17 scientific studies of Rooibos compared to more than 1,000 on green tea. So far, none suggest that Rooibos is the health equivalent of green tea.
