Rooibos grades are largely related to the percentage "needle" or leaf to stem content in the mix. A higher leaf content results in a darker liquor, richer flavour and less "dusty" aftertaste. The high-grade rooibos is exported and does not reach local markets, with major consumers being the EU, particularly Germany, where it is used in creating flavoured blends for loose-leaf tea markets.

Rooibos is being heavily hyped by producers and distributors as a new health beverage. Unlike true “tea,” it is caffeine-free and low in tannins. The South African Department of Trade and Industry issued final rules on 6 September 2013 that protects and restricts the use of the names "rooibos", "red bush", "rooibostee", "rooibos tea", "rooitee" and "rooibosch" in that country, so that the name cannot be used for things not derived from the Aspalathus linearis plant. It also provides guidance and restrictions for how products which include Rooibos, and in what measures, should use the name "rooibos" in their branding.[14]

The first green tea seeds and bushes were brought to Japan in the year 1191 A.D. by a Japanese Buddhist monk named Myoan Eisai when he returned from travels in China. The young priest used his experience growing and drinking green tea to popularize what he called “the way of tea” as a meditative ritual within his community of Japanese Buddhist monks. Matcha leaves are grown on green tea bushes kept under shade. The shade increases the amount of chlorophyll content in the leaves, which is what makes them bright green and full of nutrients. The leaves are picked by hand and the stems and veins are removed. According to Cheadle, the leaves are traditionally ground by granite stones into a super fine powder. “It takes an hour to grind the leaves, and it’s done in the dark to protect the nutrients,” she says.

Update... I made this tea cold and it was amazing! I read that another reviewer said that it had no flavor? All I can imagine is that maybe he/she is not letting the bag seep long enough? Or maybe using too much water? For my cold brew, I boil 4 cups of water and seep 6 bags for about 30 min. I then add 1 Tbsp honey and about 4-6 Tbsp fresh lemon juice. I keep that in the fridge in a glass container. When I want a drink, I fill a tall glass with ice and pour it over. As the ice melts, it dilutes the tea and is the perfect flavor! Add a sprig of fresh mint in your glass and it's even better! This is my everyday drink... delicious hot or cold!

I've been a HUGE fan of matcha for two years now. I used to order matcha water from Starbucks when it used to be 87 cents. (But corporate caught on). Matcha really, really does give you amazing steady energy throughout the whole day. I tell my friends it's like having all your cells slowly wake up one at a time and your whole body is revitalized. I know I sound like salesperson but that's honestly what it does for me. I used to have 7-8 cups of coffee a day. No exaggeration. I just graduated from grad school. But now I only need my one cup in the morning and it's matcha water for me for the rest of the day. Seriously, if you're looking for clean, no crash, HEALTHY, energy, try this ! You won't be disappointed. It also took me a while to figure out the serving size/ portions. I fill my 32 oz. canteen every morning and put 2-3 scoops and shake it up with ice. Some may like it lighter some may like it a little stronger but that's my regimen.
Like black and green tea, rooibos is rich in polyphenols, such as rutin and quercetin. Cell and animal studies, mostly from South Africa, have shown that rooibos extracts have antioxidant, immune-stimulating, and anti-cancer properties. But studies of rooibos tea in people are limited. There’s little or no evidence to back claims that it relieves constipation, headaches, eczema, asthma, insomnia, high blood pressure, mild depression, ulcers, diabetes, and so on.

Polyphenols found in green tea include epigallocatechin gallate (EGCG), epicatechin gallate, epicatechins and flavanols,[1] which are under laboratory research for their potential effects in vivo.[4] Other components include three kinds of flavonoids, known as kaempferol, quercetin, and myricetin.[5] Although the mean content of flavonoids and catechins in a cup of green tea is higher than that in the same volume of other food and drink items that are traditionally considered to promote health,[6] flavonoids and catechins have no proven biological effect in humans.[7][8]
Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.
Generally, the leaves undergo an oxidation (often termed "fermentation" in common tea processing terminology). This process produces the distinctive reddish-brown colour of rooibos and enhances the flavour. Unoxidised "green" rooibos is also produced, but the more demanding production process for green rooibos (similar to the method by which green tea is produced) makes it more expensive than traditional rooibos. It carries a malty and slightly grassy flavour somewhat different from its red counterpart.[3]
A stone mill consists of two granite parts, with a slight opening in the middle called "Fukumi." The tea is funneled in from the top, filling in this small space, and pushed out gradually. Though each stone mill can only grind up to 30-40g of Matcha per hour (that's approximately one tin), only these mills made of granite are able to preserve the color, flavor, and nutritional components of Matcha.
In this traditional Japanese preparation, the powder is sifted through a fine mesh sieve and measured into a special bowl called a chawan. Hot water is added slowly while whisking briskly in a W pattern with a bamboo whisk called a chasen until smooth with a foamy froth on top. Matcha can have a slight astringent note and is usually served with a small sweet confection called a wagashi. Because of this complementary relationship with sweets and reputed green tea health benefits, it has become a favorite ingredient for chefs and confectioners.
Research also shows that green tea lowers total cholesterol, improving the overall cholesterol profile. One population-based clinical study found that men who drink green tea are more likely to have lower total cholesterol than those who do not drink green tea. Other clinical studies that look at populations of people indicate that the antioxidant properties of green tea may help prevent atherosclerosis, particularly coronary artery disease. The benefits also seem to extend to preventing stroke, reducing high blood pressure, and inhibiting the formation of blood clots. Much of the effect may also be due to the ability of green tea to help lower blood sugar and insulin levels.
The Alzheimer's Society commented that "this study adds to previous research that suggests green tea might help to reduce the risk of Alzheimer's disease. However, the researchers used a far higher dose of the active green tea chemical than would ever be found in the human body. More research is needed to see whether green tea is protective at a much lower dose, and to understand the mechanism involved."

I am not a tea drinker.....BUT this is the Best Tea I have ever had, ever! It does not need sugar or milk but I'm sure you could add these items if you preferred. I will definitely be getting more of this tea. Please, do not ever change this tea. It is perfect as it is now. Remember I am not a tea drinker but this tea has made me one. Along with caffeine, which gives green tea its characteristic taste, bitterness, and stimulating effect, green tea is also rich in a group of chemicals, called catechin polyphenols (commonly known as tannins, which contribute to bitter taste and astringency). These catechin polyphenols include catechin, epicatechin, epicatechin gallate (ECG), epigallocatechin gallate (EGCG), and various proanthocyanidins. They are also known as flavonoids and are very powerful antioxidants. Flavonoids, together with some amino acids like thiamine, are responsible for the potent flavor of green tea.

Gyokurocha: In this variety, the tea leaves are plucked from the tip of the branches. When brewed, the color is clear green. Being picked from the tip, this variety has the best taste and fragrance, and this variety is also considered the best in terms of health. Furthermore, it is less bitter, as it contains lesser tannin and caffeine since the plucked leaves are younger and still budding. The only drawback to gyokurocha is the high cost, but as we all know, truly high-quality solutions for health never come cheap!
Zen Buddhism and the Chinese methods of preparing powdered tea were brought to Japan in 1191 by the monk Eisai. In Japan it became an important item at Zen monasteries and from the fourteenth through to the sixteenth centuries was highly appreciated by members of the upper echelons of society. Although powdered tea has not been popular in China for some time, there is now a global resurgence in the consumption of Matcha tea, including in China.
One of the key components in Matcha is the amino acid L-theanine, which is found almost exclusively in shade-grown green teas like Matcha. When L-theanine is combined with the natural caffeine in tea, it metabolizes more slowly, releasing the caffeine over a longer period of time and providing a stable three to six hour long energy boost (versus coffee caffeine at an hour to an hour and a half).
Clinical studies suggest that green tea may boost your metabolism and help you burn fat. Green tea can also help you lose weight and lower your risk of becoming overweight or obese. Much of this effect is likely due to caffeine, but other compounds in tea may also contribute to this effect. By helping you selectively burn the fat you have stored in your body for energy, green tea may help you feel fuller and maintain a more steady energy level, resulting in less hunger cravings and less calories consumed.
Rooibos (pronounced ROY-boss) appears to be matching -- and possibly besting -- the health benefits claimed for other more established teas. A favorite among South Africans for years, the beverage is said by some to have 50% more antioxidants than are found in green tea. Antioxidants are the organic substances believed to scavenge "free radicals," the toxic by-product of natural biological processes that can damage cells and lead to cancer.
You can make African red tea much like other herbal teas, according to Teavana. Add a 1 1/2 teaspoons of loose African red tea to make an 8-ounce serving, using boiling water. Allow the tea to steep for roughly five to six minutes, longer if you wish for a stronger tasting tea. Letting the tea steep for longer will not cause the tea to become bitter. Indeed, traditionally, African red tea has been allowed to steep for several days. If you want to make chilled African red tea, you can place the hot tea in the fridge to let it cool. Alternatively, double the amount of tea used and then pour the hot tea over a glass filled with ice cubes.
It’s become such a fashionable beverage that, last summer, the New York Post ran a story about how Victoria’s Secret models were flocking to Cha Cha Matcha, a hipster spot fluent in the preparation of various matcha-based miracle potions. A search for where to get “matcha” in New York, New York on Yelp yielded some 1400 plus results. Even mass market coffee purveyors like Starbucks have made matcha their mantra, with a vast range of offerings to cash in on the craze.
