One of the key components in Matcha is the amino acid L-theanine, which is found almost exclusively in shade-grown green teas like Matcha. When L-theanine is combined with the natural caffeine in tea, it metabolizes more slowly, releasing the caffeine over a longer period of time and providing a stable three to six hour long energy boost (versus coffee caffeine at an hour to an hour and a half).
Being a green tea, matcha does contain caffeine and in higher levels than other green teas. Because the entire leaf is used, matcha tea can contain nearly as much caffeine as a cup of coffee. However, caffeine release is believed to be slower because you are drinking the entire leaf. This slower release of caffeine reduces “caffeine jitters” that coffee or other teas can cause.
Ceremonial grade: This is the highest quality used mainly in tea ceremonies and Buddhist temples. This is stone-ground into a powder by granite stone mills. It is high-quality and expensive (~$100–140 for 100g). The unschooled drinker is unlikely to notice a large difference between Ceremonial and Premium grade. Ceremonial is characterized by subtle tones of "umami".
A book written by Lu Yu in 600-900 AD (Tang Dynasty), "Tea Classic" (simplified Chinese: 茶经; traditional Chinese: 茶經; pinyin: chájīng), is considered important in green tea history. The Kissa Yojoki (喫茶養生記 Book of Tea), written by Zen priest Eisai in 1211, describes how drinking green tea may affect five vital organs, the shapes of tea plants, flowers and leaves, and how to grow and process tea leaves.
Does green tea really burn fat, and will drinking green tea help you lose more weight? According to some research findings, consuming antioxidants found in green tea, especially catechins and the compound called EGCG, may promote metabolic health and modestly prevent weight gain. When 11 studies and articles were included in one 2009 meta-analysis that was published in the International Journal of Obesity, researchers found that “catechins or an epigallocatechin gallate (EGCG)-caffeine mixture have a small positive effect on weight loss and weight maintenance.” (12)

A stone mill consists of two granite parts, with a slight opening in the middle called "Fukumi." The tea is funneled in from the top, filling in this small space, and pushed out gradually. Though each stone mill can only grind up to 30-40g of Matcha per hour (that's approximately one tin), only these mills made of granite are able to preserve the color, flavor, and nutritional components of Matcha.
Unlike traditional green tea, matcha preparation involves covering the tea plants with shade cloths before they’re harvested. This triggers the growth of leaves with better flavor and texture, which are hand selected, steamed briefly to stop fermentation, then dried and aged in cold storage, which deepens the flavor. The dried leaves are then stone-ground into a fine powder.
Instead of being rolled, shaped and dried like traditional green tea leaves, the leaves destined to become Matcha are laid flat to dry. Grinding the leaves into Matcha is a slow process. If the mill stones overheat, the delicate green tea leaves might become damaged, which alters the flavor and taste. For reference, it takes about one hour to grind 30g of Matcha.
When I woke up, I was in my dad’s arms. I woke up to the smell of Isopropyl Alcohol. The pungent smell brought me back to consciousness. My body felt like jelly and my ears were ringing. By now, EMT had arrived. As my senses made their way back to me, the clammy, jelly sensation of my skin turned to pins and needles, which was oddly calming. It felt good to feel my skin again, to feel warmth after experiencing that weird, chilling cold. I knew then, I was going to be okay.
Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.
Day 3: As I started to make my 5th cup in 3 days, my best friend said, “Ab, I really don’t think you should be drinking so much of this stuff. Why don’t you just stick to the recommended amount?” I responded with “It’s just TEA — what’s the worst that could happen?” On day 3, I learned. I had decided to give up coffee during my 28 days, both as a way to save my sanity and excretory system and as a way to wean myself out of my coffee habit. That was really stupid. By day 3, I was experiencing a horrifying caffeine headache and a rough case of the spins. I was also literally exhausted and finally feeling the ~desired effects~ of the detox (frequent trips to the bathroom, to put it lightly), so I was dealing with an excess of that on top of my other horrible side effects. Do I blame the tea? Not even a little. I blame myself for overindulging in too much of a good thing. From there on out, I decided to follow the rules.
According to the National Cancer Institute, the polyphenols in tea have been shown to decrease tumor growth in both animal and laboratory studies. Researchers believe that it is the high level of polyphenols in tea that help kill cancerous cells and stop them from growing, although the exact mechanism by which tea inhibits and prevents cancerous cells is uncertain.
Along with caffeine, which gives green tea its characteristic taste, bitterness, and stimulating effect, green tea is also rich in a group of chemicals, called catechin polyphenols (commonly known as tannins, which contribute to bitter taste and astringency). These catechin polyphenols include catechin, epicatechin, epicatechin gallate (ECG), epigallocatechin gallate (EGCG), and various proanthocyanidins. They are also known as flavonoids and are very powerful antioxidants. Flavonoids, together with some amino acids like thiamine, are responsible for the potent flavor of green tea.
