Like gyokuro, matcha is shaded before plucking. The plucked and processed leaf is called tencha. This product is then ground into a fine powder, which is matcha. Because the tea powder is very perishable, matcha is usually sold in small quantities. It is typically rather expensive. Matcha is the type of tea used in the Japanese tea ceremony. It is prepared by whisking the tea with hot water in a bowl, until the surface is frothy. If the water is too hot, the tea may become overly bitter.
Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.

2. Enables digestion: Red tea is caffeine-free and also free of tannins. This element is present in other teas and is known to cause digestive issues among many people. Red tea is a storehouse of antispasmodic elements, preventing diarrhea and gastric issues. It has no oxalic acid, this makes it suitable for those who are prone to developing kidney stones.
Instead of being rolled, shaped and dried like traditional green tea leaves, the leaves destined to become Matcha are laid flat to dry. Grinding the leaves into Matcha is a slow process. If the mill stones overheat, the delicate green tea leaves might become damaged, which alters the flavor and taste. For reference, it takes about one hour to grind 30g of Matcha.
Red tea is also known as Black tea in Asia. White, green, oolong, and black teas all come from the same plant, the Camellia sinensis. The difference in their flavor lays on the drying processes of their leaves, which determine how oxidized the final product is. Red tea is made of completely oxidized tea leaves, resulting in a darker and aromatic tea drink.
• One Chinese study found that men who drank more than three cups of tea a day reduced their risk of prostate cancer by 70 percent. In another study funded by the National Institute of Health, 79 men with prostate cancer were told to either drink 6 cups of green tea a day or 6 cups of water. After 3 to 8 weeks, the levels of prostate-specific antigen, a protein that may indicate cancer, were lower in the men who drank green tea than those who drank water. An indicator of inflammation, nuclear factor-kappaB, linked to cancer growth, was also lower in the men who drank the green tea.
In 2004, scientists at the University of Newcastle studied the effects of black and green tea on Alzheimer’s disease. In laboratory studies, both teas prevented the breakdown of acetylcholine, the neurotransmitter strongly linked with memory. The teas also inhibited enzymes known as BuChE and beta-secretase. These enzymes are found in protein deposits found in the brain of Alzheimer’s patients. (7)
If not taken with sugar, the alkaline nature of green tea helps reduce the blood glucose level. Moreover, the antioxidant and astringent qualities of green tea ensure good health and better functioning of the pancreas. Improving the function of the pancreas means a more efficient and regulated secretion of insulin and the subsequent improvement in decomposing and absorbing of sugar. This increase in effective functions can help prevent the onset of diabetes.
Another big draw health benefit-wise is that matcha, like green tea, is loaded with antioxidants. A study, published in 2014, found the plant also had antimicrobial properties, particularly the four types of catechins (antioxidant properties flavonoids) it contains, against a few different types of microorganisms. Yet another study, published in Nature, proved that catechins inhibit the growth of a bacteria called Fusobacterium nucleatum — the bacteria that causes cavities and periodontal disease.
The preparation of matcha is the focus of Japanese tea ceremonies, and it has long been associated with Zen. This is likely one reason it’s becoming so popular, as meditation is becoming more and more mainstream. Apart from causing premature aging, free radicals are also responsible for causing certain types of cancer. The catechins present in green tea neutralize these free radicals, prevent the formation of carcinogens like nitrosamines and reduce the risk of cancer for people who regularly consume it. Green tea is now being clinically used and prescribed as a home remedy to aid in the prevention of cancer, particularly for those patients at high risk for cancer in the colon, rectum, pancreas, and intestines.
