Green tea is processed using either artisanal or modern methods. Sun-drying, basket or charcoal firing, or pan-firing are common artisanal methods. Oven-drying, tumbling, or steaming are common modern methods.[32] Processed green teas, known as aracha, are stored under low humidity refrigeration in 30- or 60-kg paper bags at 0–5 °C (32–41 °F). This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Finally, each lot will be blended according to the blending order by the tasters and packed for sale.[33]

A great deal of evidence from randomized controlled trials suggests that consumption of flavan-3-ols and anthocyanidin antioxidants, the types found in green tea, is beneficial for metabolic and cardiovascular health. Day 14: At halfway through my detox, I finally officially figured out what works for me and my body. The plan: my standard first-thing-in-morning cup of coffee, then an iced version of the tea to drink with me throughout the day. I sip it all day long, and it’s both refreshing and hydrating. Because matcha is prone to clumping (that’s why you’ll see instructions to sift it before whisking in the water or milk), you’ll want to take the same precaution in your baking experiments: Saffitz suggests combining the matcha with other dry ingredients like sugar or flour to avoid bitter lumps in your dough or batter. And use it sparingly, she suggests: Even a few teaspoons can create an intense flavor (and color).
Stone ground: Instead of being rolled, shaped, and dried like traditional green tea leaves, the leaves destined for matcha are laid flat to dry and become tencha, the leaves from which matcha is made. The tencha leaves are then stripped of their stems and veins. The remaining leaf material is ground in slow-turning stone mills, yielding a smooth green tea powder.
Another big draw health benefit-wise is that matcha, like green tea, is loaded with antioxidants. A study, published in 2014, found the plant also had antimicrobial properties, particularly the four types of catechins (antioxidant properties flavonoids) it contains, against a few different types of microorganisms. Yet another study, published in Nature, proved that catechins inhibit the growth of a bacteria called Fusobacterium nucleatum — the bacteria that causes cavities and periodontal disease.

Rooibos grades are largely related to the percentage "needle" or leaf to stem content in the mix. A higher leaf content results in a darker liquor, richer flavour and less "dusty" aftertaste. There’s a right and wrong way to brew green tea. When brewing green tea, take a little extra care, as boiling water is bad for the precious catechins (tea’s healthy chemicals). Do bring your water to a boil, but let it rest for about ten minutes. Then, pour the water over the tea and brew for about one minute before serving. Of course, the brew time can be made shorter or longer, depending on your taste.

The taste is of matcha is strong. Some people describe it as grass or spinach-like, and it has an umami taste. Because of this it may be sweetened to improve its palatability. One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. The first ingredient was sugar, and it also contained powdered milk, so it was essentially like hot chocolate—but with cocoa swapped for matcha—something I wouldn’t recommend. Studies on green tea’s impact on cancer have been mixed. But green tea is known to aid healthy cells in all stages of growth. In fact, the National Cancer Institute's web site says it "does not recommend for or against the use of tea to reduce the risk of any type of cancer."
I've been a HUGE fan of matcha for two years now. I used to order matcha water from Starbucks when it used to be 87 cents. (But corporate caught on). If you're like me and Starbucks' $5 drink isn't working for you, but you still crave your matcha this is the closest thing you'll get as far as results go. I'll be honest though, through some investigation, I discovered that Starbucks put some sugar with their matcha. So no, it doesn't taste AS sweet. After a few times though and experimenting, I mix up my matcha with coconut milk and it's just as delicious. I'm also a HUGE caffeine addict. Matcha really, really does give you amazing steady energy throughout the whole day. I tell my friends it's like having all your cells slowly wake up one at a time and your whole body is revitalized. I know I sound like salesperson but that's honestly what it does for me. I used to have 7-8 cups of coffee a day. No exaggeration. I just graduated from grad school. But now I only need my one cup in the morning and it's matcha water for me for the rest of the day. Seriously, if you're looking for clean, no crash, HEALTHY, energy, try this ! You won't be disappointed. It also took me a while to figure out the serving size/ portions. I fill my 32 oz. canteen every morning and put 2-3 scoops and shake it up with ice. Some may like it lighter some may like it a little stronger but that's my regimen.

Generally, the leaves undergo an oxidation (often termed "fermentation" in common tea processing terminology). This process produces the distinctive reddish-brown colour of rooibos and enhances the flavour. Unoxidised "green" rooibos is also produced, but the more demanding production process for green rooibos (similar to the method by which green tea is produced) makes it more expensive than traditional rooibos. It carries a malty and slightly grassy flavour somewhat different from its red counterpart.[3]

Rooibos is being heavily hyped by producers and distributors as a new health beverage. Unlike true “tea,” it is caffeine-free and low in tannins. It contains minimal amounts of calcium, potassium, iron, zinc, magnesium and much less fluoride than found in real teas. Studies have shown that Rooibos does contain antioxidants and therefore might have some of the health benefits of green tea, but very little research has confirmed this. I found only 17 scientific studies of Rooibos compared to more than 1,000 on green tea. So far, none suggest that Rooibos is the health equivalent of green tea.
Red rooibos tea is an excellent thirst quencher and does wonders for athletes, hyperactive children, and those who travel often, whether for pleasure or business. Most people prefer to brew red rooibos loose leaf tea in its natural form without using any sweeteners. For those who simply want a refreshing drink, caffeine-free rooibos tea is an ideal choice.

Green tea, however, is considered to have originated in China. It is said that even today the word “tea” in China refers only to green tea, not to the general category of tea as it does in the West.
