Rooibos, also known as African red bush, grows near Cape Town, in the Cederberg region. To produce red tea, manufacturers harvest and chop the needle-shaped green leaves of the rooibos plants, which are then dampened and fermented for 12 hours. Once fermented, the leaves oxidize, turning red before they are dried and sold as loose or bagged tea. When steeped in hot water, the resulting liquid has a reddish-amber hue and an earthy taste that isn't bitter because it's low in tannins. You can drink it alone or with milk, sugar, honey or lemon. This somewhat astringent tea is rich in antioxidants, including quercetin, aspalathin and nothofagin, all of which have anti-inflammatory and calming properties, according to the "Journal of Agricultural and Food Chemistry," published in July 2009.
There are also several harmful effects of green tea over-consumption that are possible. These include consuming tainted supplements marked as green tea extract, high caffeine consumption, consuming aluminum, and the effects of tea polyphenols on iron bioavailability. Green tea extracts should not be taken by patients suffering from renal failure, liver disease, heart conditions or major cardiovascular problems without supervision from a doctor. People sensitive to caffeine should be careful of their intake. Pregnant and breast-feeding women should drink no more than one or two cups per day, as some research shows that more caffeine than this amount may interfere with normal heart rhythms.
Matcha is treated with a light-controlled process in the last few weeks before harvest. Researchers from the Netherlands confirmed in a recent study that two green tea compounds, L-theanine and caffeine, can significantly boost levels of attention and alertness, building on what is already known about the brain benefits of green tea. The drink is less likely to make you jittery and anxious than other energy-boosting drinks, because it contains lower levels of caffeine than other teas or coffee. In another study published in the American Journal of Clinical Nutrition, researchers discovered that drinking just one cup of green tea a day made people age 55 and older 38 percent less likely to experience a decline in their mental abilities. Drinking a second cup daily made them 54 percent less likely to show mental declines.

I am not a tea drinker.....BUT this is the Best Tea I have ever had, ever! It does not need sugar or milk but I'm sure you could add these items if you preferred. A 2014 study looked at 25 randomized controlled trials on the link between tea and blood pressure and reported that when people drank tea—especially green tea—for 12 weeks, their blood pressure dropped significantly. Steamed: Like most Japanese teas, the tea leaves destined for matcha are first steamed. The leaves are treated briefly with steam heat within hours of plucking to both halt the oxidation process and bring out the rich green color of the shade-grown tea leaves even more. The steaming process creates a unique flavor profile that is often described as sweet and vegetal.

Rooibos is especially rich in the super-antioxidant compound quercetin.
