Rooibos is sometimes used as substitute for milk with colicky babies, says Alvaro Viljoen, PhD, of the department of pharmacy at the University of the Witwatersrand. Matcha is made from shade-grown tea leaves that also are used to make gyokuro. The preparation of matcha starts several weeks before harvest and may last up to 20 days, when the tea bushes are covered to prevent direct sunlight.[5][better source needed] This slows down growth, stimulates an increase in chlorophyll levels, turns the leaves a darker shade of green, and causes the production of amino acids, in particular theanine. Only the finest tea buds are hand-picked. After harvesting, if the leaves are rolled up before drying as in the production of sencha, the result will be gyokuro (jade dew) tea. If the leaves are laid out flat to dry, however, they will crumble somewhat and become known as tencha (碾茶). Basically, tea time may not be for you. I know we all want “quick results,” but instead a gradual change in diet is best. Since my last tea scare, I’ve actually gotten accustomed to simply eating better. Stuff like eliminating dairy has helped with my “fupa” (lower belly pudge), and overall bloat. Because matcha is a powder made from ground tea leaves, it is not steeped in the traditional way. To prepare matcha, add between ½ teaspoon and 1 teaspoon of matcha green tea powder to a cup. You may need to experiment with the proportions of water and matcha powder to find your favored strength.
Studies in laboratory animals have found that green tea polyphenols inhibit the growth of esophageal cancer cells (in line with its anti-cancer properties). Other clinical studies have found that green tea offers protection against the development of esophageal cancer, particularly among women. However, one large-scale population-based clinical study found just the opposite: drinking green tea was associated with an increased risk of esophageal cancer, and the stronger and hotter the tea, the greater the risk. It seems that if the water is very hot, it can damage the esophagus and lead to long-term adverse consequences. So just make sure the tea you drink isn’t extremely hot.

• One Chinese study found that men who drank more than three cups of tea a day reduced their risk of prostate cancer by 70 percent. In another study funded by the National Institute of Health, 79 men with prostate cancer were told to either drink 6 cups of green tea a day or 6 cups of water. After 3 to 8 weeks, the levels of prostate-specific antigen, a protein that may indicate cancer, were lower in the men who drank green tea than those who drank water. An indicator of inflammation, nuclear factor-kappaB, linked to cancer growth, was also lower in the men who drank the green tea.
