Rooibos (pronounced ROY-boss) appears to be matching -- and possibly besting -- the health benefits claimed for other more established teas. A favorite among South Africans for years, the beverage is said by some to have 50% more antioxidants than are found in green tea. Antioxidants are the organic substances believed to scavenge "free radicals," the toxic by-product of natural biological processes that can damage cells and lead to cancer.
Green tea has slightly more antioxidants compared to black tea, although both are still great sources. The ORAC value (antioxidant content) of brewed black tea is 1,128 while green tea is slightly higher at 1,253. Black tea and green tea both contain antioxidants, including polyphenols. Sometimes given to babies suffering from colic, rooibos is known for anti-spasmodic activity. A growing body of evidence suggests that the health benefits of rooibos may be quite broad, including evidence that the antioxidants in the tea may reduce the risk of heart disease, and may inhibit some parameters of aging. Rooibos even shows use as a cosmetic ingredient for soothing, protecting and repairing skin.
In 1904, Benjamin Ginsberg ran a variety of experiments at Rondegat Farm, finally curing rooibos. He simulated the traditional Chinese method of making Keemun by fermenting the tea in barrels. The major hurdle in growing rooibos commercially was that farmers could not germinate the rooibos seeds. The seeds were hard to find and impossible to germinate commercially.

Gardenia fruit is used extensively in Traditional Chinese Medicine (TCM), where it is known as zhi zi. TCM uses gardenia primarily to promote calm, but it is also used to support bladder and urinary tract health.
Some of the antioxidants and healing compounds found in green tea include polyphenols, catechins and various other types of flavonoids — the same anti-aging compounds found in things like red wine, blueberries and dark chocolate. Despite that it does contain small amounts of caffeine, green tea consumption has been associated with more health benefits than even many of the healthiest foods available to us. The difference in their flavor lays on the drying processes of their leaves, which determine how oxidized the final product is. Red tea is made of completely oxidized tea leaves, resulting in a darker and aromatic tea drink.
Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
