Every day, countless people throw away valuable antioxidants and minerals. While seemingly unimaginable, that’s exactly what happens when you brew a cup of green tea because water can only extract a fraction of green teas benefits. Prior to use, the matcha often is forced through a sieve in order to break up clumps. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. Be sure and read the packaging carefully or ask your tea supplier directly for the caffeine information specific to the matcha you are buying.

Caffeine content: Matcha tea contains some amount of caffeine which may trigger allergic reactions. These reactions may include diarrhea, cardiac arrhythmia, and irritable bowel syndrome. According to science, matcha is something of a miracle supplement. For one, it makes you feel good. One recent study examined the effects of the phytochemicals in green tea on mood and cognition. Along with caffeine, which gives green tea its characteristic taste, bitterness, and stimulating effect, green tea is also rich in a group of chemicals, called catechin polyphenols (commonly known as tannins, which contribute to bitter taste and astringency). These catechin polyphenols include catechin, epicatechin, epicatechin gallate (ECG), epigallocatechin gallate (EGCG), and various proanthocyanidins. They are also known as flavonoids and are very powerful antioxidants. Flavonoids, together with some amino acids like thiamine, are responsible for the potent flavor of green tea.

Studies in laboratory animals have found that green tea polyphenols inhibit the growth of esophageal cancer cells (in line with its anti-cancer properties). Other clinical studies have found that green tea offers protection against the development of esophageal cancer, particularly among women. However, one large-scale population-based clinical study found just the opposite: drinking green tea was associated with an increased risk of esophageal cancer, and the stronger and hotter the tea, the greater the risk. It seems that if the water is very hot, it can damage the esophagus and lead to long-term adverse consequences. So just make sure the tea you drink isn’t extremely hot.

Pu-erh tea typically has a strong fermentation taste but high quality pu-erh should not taste overly earthy as this is a sign of low quality production techniques.

According to the National Cancer Institute, the polyphenols in tea have been shown to decrease tumor growth in both animal and laboratory studies. Rooibos tea is anti-inflammatory in nature, which means that it reduces blood pressure and scavenges free radicals like other antioxidants. Quercetin, another powerful antioxidant found in rooibos tea, has been linked to preventing a wide variety of heart conditions. It promotes an increase in HDL cholesterol (good cholesterol) and inhibits the LDL cholesterol (bad cholesterol) from binding to the walls of arteries and blood vessels.
Word of Caution: Despite all of these health benefits of rooibos tea, there can be a downside for some people. Since rooibos is so powerful, it can interfere with treatments for various conditions, including chemotherapy for cancer patients. Also, rooibos has shown estrogenic activities in certain studies, so it might not be a good idea to use if you have hormone-sensitive cancer like breast cancer.

Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
