Yup, those samurai. The samurai were cultured, fearsome warriors who ranked highly in ancient Japanese caste society. Their identity was built on Zen Buddhism, practicing the principles of discipline, ritual, and purification. The tea ceremony developed into an art form and cultural tradition as the samurai added hundreds of detailed steps in the practice. Specific instructions for how to sit and how to prepare Matcha green tea, the proper hand movements and even the proper design for a tea room were recorded in detail. 

The preparation of matcha is the focus of Japanese tea ceremonies, and it has long been associated with Zen. This is likely one reason it’s becoming so popular, as meditation is becoming more and more mainstream. Because I’m blown away by the research on the health and weight loss benefits of mindfulness meditation, I included an entire chapter about this practice in my new book Slim Down Now, and recorded a five-minute guided meditation video on my website (click on the word mindful, top right to view).
Like gyokuro, matcha is shaded before plucking. The plucked and processed leaf is called tencha. This product is then ground into a fine powder, which is matcha. Because the tea powder is very perishable, matcha is usually sold in small quantities. It is typically rather expensive.[62] Matcha is the type of tea used in the Japanese tea ceremony. It is prepared by whisking the tea with hot water in a bowl, until the surface is frothy. If the water is too hot, the tea may become overly bitter.[64]
Studies on green tea’s impact on cancer have been mixed. But green tea is known to aid healthy cells in all stages of growth. There are some clues that green tea may help destroy cancer cells, but that research is still in its early stages, so you shouldn’t count on green tea to prevent cancer. In fact, the National Cancer Institute's web site says it "does not recommend for or against the use of tea to reduce the risk of any type of cancer."
Instead of being rolled, shaped and dried like traditional green tea leaves, the leaves destined to become Matcha are laid flat to dry. Grinding the leaves into Matcha is a slow process. If the mill stones overheat, the delicate green tea leaves might become damaged, which alters the flavor and taste. For reference, it takes about one hour to grind 30g of Matcha.
Rooibos contains polyphenols that have anti-inflammatory, antiviral, and antimutagenic qualities. Polyphenols are organic chemicals that are often praised for their antioxidant capabilities. Studies suggest that regularly drinking organic red rooibos tea provides the liver with potent antioxidants, helping the organ to improve detoxification. Antioxidants act as scavengers of free radicals throughout the body, which are detrimental byproducts of cell metabolism that can cause cancer and heart diseases. Aspalathin and nothofagin are two other vital antioxidants that rooibos tea contains, making it a great beverage to boost your immune system and protect your body against all types of diseases.
In 2004, scientists at the University of Newcastle studied the effects of black and green tea on Alzheimer’s disease. In laboratory studies, both teas prevented the breakdown of acetylcholine, the neurotransmitter strongly linked with memory. The teas also inhibited enzymes known as BuChE and beta-secretase. These enzymes are found in protein deposits found in the brain of Alzheimer’s patients. (7)

Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.


Scientists have also discovered that the antioxidants flavonoids may also protect the brain from oxidative stress. The scientists extrapolated that a human would need to drink about three liters of liquid infused with 0.5 percent of the catechins to get similar effects. However, because humans ingest other antioxidants in the form of vitamins and plant polyphenols, it’s likely that a much lower quantity could be effective in protecting memory.

Word began to spread and rooibos tea was suddenly being put up against a number of health issues to see what benefits it showers. 50 years later, the world knows all about this powerful little herb! The exact mechanism by which it soothes colic and stomach pain is unknown, but the anti-inflammatory properties of the herb are most likely responsible.

In 1904, Benjamin Ginsberg ran a variety of experiments at Rondegat Farm, finally curing rooibos. He simulated the traditional Chinese method of making Keemun by fermenting the tea in barrels. The major hurdle in growing rooibos commercially was that farmers could not germinate the rooibos seeds. The seeds were hard to find and impossible to germinate commercially.[citation needed]
"Drink tea if you enjoy it, in moderation, and not because you're taking it as a medicine," says Dr. Sesso. Stirring in a little sugar is fine, but if you add a few heaping teaspoons of sugar, you're probably canceling out tea's possible benefits, he notes. And beware of the sugar found in many bottled teas, some of which contain as much as nine teaspoons of sugar per serving—almost as much as colas and other soft drinks. Green tea can help you lose weight. Several studies have suggested that the flavonoids and caffeine in green tea can help elevate metabolic rate, increase fat oxidation and even improve insulin activity. One study showed that those who consumed green tea and caffeine lost an average of 2.9 pounds during a 12-week period, while sticking to their regular diet. Another study suggested the increase in calorie output was equal to about 100 calories over a 24-hour period.
The alpha hydroxy acid and zinc in this red tea are very good for the skin. You can also try applying some rooibos tea powder directly to the skin to relieve acne, pimples, sunburn or related skin conditions. Alpha-hydroxy acids can reduce the signs of wrinkles and other premature aging symptoms but they are rarely found in natural products. They are found in chemical peels, which revitalize the skin and leave it fresh and invigorated with a healthy glow. However, there has been some controversy about commercial uses of alpha hydroxy acid, so it is always better to get it from a natural source, like red rooibos tea.
Several varieties of green tea exist, which differ substantially based on the variety of C. sinensis used, growing conditions, horticultural methods, production processing, and time of harvest. Although there has been considerable research on the possible health effects of consuming green tea regularly, there is little evidence that drinking green tea has any effects on health.[2]
Ceremonial grade: This is the highest quality used mainly in tea ceremonies and Buddhist temples. This is stone-ground into a powder by granite stone mills. It is high-quality and expensive (~$100–140 for 100g). The unschooled drinker is unlikely to notice a large difference between Ceremonial and Premium grade. Ceremonial is characterized by subtle tones of "umami".
I'll be the first to admit I am NO matcha tea expert. However, I do enjoy this tea a lot. It has a very green, planty taste kind of. It is a lot stronger than something like generic green tea bags from different brands I have tried. I use a tiny whisk to stir it up in hot water and drink. There are some grains at the bottom of the cup that I drink, but it isn't as crazy as greek coffee or anything like that with a thick sludge at the bottom. I like that this gives me the benefits of green tea without having to down as many cups of it, because the matcha is much more potent.

Tea culture of Korea was actively suppressed by the Japanese during the Japanese forced occupation period (1910‒1945), and the subsequent Korean War (1950‒1953) made it even harder for the Korean tea tradition to survive.[70] The restoration of the Korean way of tea began in the 1970s, around Dasolsa.[70] Commercial production of green tea in South Korea only began in the 1970s,.[71] By 2012 the industry was producing 20% as much tea as Taiwan and 3.5% as much as Japan.[72][73] Green tea is not as popular as coffee or other types of Korean teas in modern South Korea. The annual consumption per capita of green tea in South Korea in 2016 was 0.16 kg (0.35 lb), compared to 3.9 kg (8.6 lb) coffee.[74] Recently however, as the coffee market reached saturation point, South Korean tea production doubled during 2010‒2014,[75] as did tea imports during 2009-2015,[76] despite very high tariff rate (513.6% for green tea, compared to 40% for black tea, 8% for processed/roasted coffee, and 2% for raw coffee beans).
