The first green tea seeds and bushes were brought to Japan in the year 1191 A.D. by a Japanese Buddhist monk named Myoan Eisai when he returned from travels in China. The young priest used his experience growing and drinking green tea to popularize what he called “the way of tea” as a meditative ritual within his community of Japanese Buddhist monks. In 2004, scientists at the University of Newcastle studied the effects of black and green tea on Alzheimer’s disease. In laboratory studies, both teas prevented the breakdown of acetylcholine, the neurotransmitter strongly linked with memory. The teas also inhibited enzymes known as BuChE and beta-secretase. Koicha, or thick tea, requires significantly more matcha (usually about doubling the powder and halving the water): approximately 3.75 grams (amounting to 3 heaping chashaku scoops, or about one teaspoon) of matcha and approximately 40 ml (1.3 oz) of hot water per serving, or as many as six teaspoons to 3/4 cup of water. Because the resulting mixture is significantly thicker (with a similar consistency to liquid honey), blending it requires a slower, stirring motion that does not produce foam. Koicha is normally made with more expensive matcha from older tea trees (exceeding thirty years) and, thus, produces a milder and sweeter tea than usucha; it is served almost exclusively as part of Japanese tea ceremonies.

This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Finally, each lot will be blended according to the blending order by the tasters and packed for sale.[33]

In 1994, Burke International registered the name "Rooibos" with the US Patent and Trademark Office, thus establishing a monopoly on the name in the United States at a time when it was virtually unknown there. When the plant later entered more widespread use, Burke demanded that companies either pay fees for use of the name, or cease its use. In 2005, the American Herbal Products Association and a number of import companies succeeded in defeating the trademark through petitions and lawsuits; after losing one of the cases, Burke surrendered the name to the public domain.[13]
The oldest tea producing region in Japan is Uji, located near the former capital of Kyoto.[50] It is thought that seeds sent by Eisai were planted in Uji, becoming the basis of the tea industry there.[51] Today, Japan's most expensive premium teas are still grown in Uji.[52] The largest tea producing area today is Shizuoka Prefecture, which accounts for 40% of total Japanese sencha production.[53][52] Other major tea producing regions include the island of Kyushu and the prefectures of Shiga, Gifu, and Saitama in central Honshu.[52]

Honestly, this seemed to help out with my acne. Cell and animal studies, mostly from South Africa, have shown that rooibos extracts have antioxidant, immune-stimulating, and anti-cancer properties. But studies of rooibos tea in people are limited. There’s little or no evidence to back claims that it relieves constipation, headaches, eczema, asthma, insomnia, high blood pressure, mild depression, ulcers, diabetes, and so on.

Green tea also seems to boost physical performance, increase exercise endurance, and decrease reaction time, and there are many, many such studies showing these effects from caffeine, although other ingredients in green tea may aid this effect. Caffeine, and green tea’s, ability to mobilize fatty acids in fat tissue to make them more easily available for use as energy also seems to aid physical performance. In one study, caffeine was shown to significantly increase physical performance (exercise endurance and exertion). The antioxidants in green tea may also help prevent tissue damage during physical exertion as well.

Drinking green tea or taking green tea supplements decreases the blood concentration of total cholesterol (about 3–7 mg/dL), LDL cholesterol (about 2 mg/dL), and does not affect the concentration of HDL cholesterol or triglycerides.[23][22][26] A 2013 Cochrane meta-analysis of longer-term randomized controlled trials (>3 months duration) concluded that green tea consumption lowers total and LDL cholesterol concentrations in the blood.[23]


Domestic Process: This is a very simple process. It involves repeated steeping of tea in hot water and the disposal of the water (you may use this tea to serve those who don’t mind having caffeinated tea). The more you repeat the process, the less caffeine there will be left in the tea, but the same is true of the taste and flavor. Basically, don’t overdo it. Two or three steepings are probably safe. After all, you do want tea and not plain, hot water, right?

This is actually why rooibos tea is a well-known health aid. Many South African women claimed that this plant was very soothing for their colicky infant.
What I will tell you is that there are a LOT of options for these fitness teas. I did a lot of research before purchasing one, so my best advice to you is to make yourself a list of available options (see below), determine what you hope to gain from the experience (see even further below), and then research the specific ingredients for yourself. Here’s the moral of the story: They’re all very similar, but it’s important to be aware of what you are personally putting in your own body. But due to concerns about lead, I recommend avoiding “matcha madness.” Even with superfoods, you can get too much of a good thing (check out my article 4 Superfoods You Might Be Overeating). So look for pure, organic, quality matcha, and enjoy it in moderation.

The taste is of matcha is strong. Some people describe it as grass or spinach-like, and it has an umami taste. Because of this it may be sweetened to improve its palatability. One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. The first ingredient was sugar, and it also contained powdered milk, so it was essentially like hot chocolate—but with cocoa swapped for matcha—something I wouldn’t recommend.
