Domestic Process: This is a very simple process. It involves repeated steeping of tea in hot water and the disposal of the water (you may use this tea to serve those who don’t mind having caffeinated tea). The more you repeat the process, the less caffeine there will be left in the tea, but the same is true of the taste and flavor. Basically, don’t overdo it. Two or three steepings are probably safe. After all, you do want tea and not plain, hot water, right?
Even organically grown green teas have been shown to contain lead, which is absorbed by the plant from the environment, particularly tea grown in China. When traditional green tea is steeped, about 90% of the lead stays in the leaf, which is discarded. With matcha, since the whole leaf is consumed, you will ingest more lead. One independent group, ConsumerLab.com, which tested teas, estimates that a cup of matcha may contain as much as 30 times more lead than a cup of green tea. Therefore, they recommend drinking no more than one cup daily, and not serving it to children.
These are some of the many benefits but the reality is one cup of tea a day will not give you all the abundant gains. The jury is out on how many cups are necessary; some say as little as two cups a day while others five cups. If you are thinking of going down this route, you may want to consider taking a green tea supplement instead (it would keep you out of the bathroom).
A stone mill consists of two granite parts, with a slight opening in the middle called "Fukumi." The tea is funneled in from the top, filling in this small space, and pushed out gradually. Though each stone mill can only grind up to 30-40g of Matcha per hour (that's approximately one tin), only these mills made of granite are able to preserve the color, flavor, and nutritional components of Matcha.
Zen Buddhism and the Chinese methods of preparing powdered tea were brought to Japan in 1191 by the monk Eisai. In Japan it became an important item at Zen monasteries and from the fourteenth through to the sixteenth centuries was highly appreciated by members of the upper echelons of society. Although powdered tea has not been popular in China for some time, there is now a global resurgence in the consumption of Matcha tea, including in China.

Update... I made this tea cold and it was amazing! I read that another reviewer said that it had no flavor? All I can imagine is that maybe he/she is not letting the bag seep long enough? Or maybe using too much water? For my cold brew, I boil 4 cups of water and seep 6 bags for about 30 min. I then add 1 Tbsp honey and about 4-6 Tbsp fresh lemon juice. I keep that in the fridge in a glass container. When I want a drink, I fill a tall glass with ice and pour it over. As the ice melts, it dilutes the tea and is the perfect flavor! Add a sprig of fresh mint in your glass and it's even better! This is my everyday drink... delicious hot or cold!
In this traditional Japanese preparation, the powder is sifted through a fine mesh sieve and measured into a special bowl called a chawan. Hot water is added slowly while whisking briskly in a W pattern with a bamboo whisk called a chasen until smooth with a foamy froth on top. Matcha can have a slight astringent note and is usually served with a small sweet confection called a wagashi. Because of this complementary relationship with sweets and reputed green tea health benefits, it has become a favorite ingredient for chefs and confectioners.
Matcha (抹茶, Japanese pronunciation pronounced [mat.tɕa], English /ˈmætʃə/[i]) is finely ground powder of specially grown and processed green tea leaves. It is special in two aspects of farming and processing: the green tea plants for matcha are shade-grown for about three weeks before harvest and the stems and veins are removed in processing. During shaded growth, the plant Camellia sinensis produces more theanine and caffeine. The powdered form of matcha is consumed differently from tea leaves or tea bags, and is dissolved in a liquid, typically water or milk.
If not taken with sugar, the alkaline nature of green tea helps reduce the blood glucose level. Moreover, the antioxidant and astringent qualities of green tea ensure good health and better functioning of the pancreas. Improving the function of the pancreas means a more efficient and regulated secretion of insulin and the subsequent improvement in decomposing and absorbing of sugar. This increase in effective functions can help prevent the onset of diabetes.
About two to four grams of matcha is placed into the bowl, traditionally using a bamboo scoop called a chashaku, and then about 60-80 ml of hot (70–85 °C or 158–185 °F, not boiling,) water is added. The mixture is then whisked to a uniform consistency, using a bamboo whisk known as a chasen. There must be no lumps left in the liquid, and no ground tea should remain on the sides of the bowl. Because matcha may be bitter, it is traditionally served with a small wagashi sweet (intended to be consumed before drinking), but without added milk or sugar. It usually is considered that 40 g of matcha will provide for 20 bowls of usucha or 10 bowls of koicha:
Drinking green tea and matcha are considered healthy and safe, but people sensitive to caffeine should be aware that both contain decent amounts of the stimulant. In 2016, the World Health Organization also linked the consumption of hot drinks, like coffee and tea, to a higher risk of cancer of the esophagus. However, the risk is much lower than the risk of cancer from other causes, like smoking.
Dr Nortier cultivated the first plants at Clanwilliam on his farm Eastside and on the farm Klein Kliphuis. The tiny seeds were very difficult to come by. Dr Nortier paid the local villagers £5 per matchbox of seeds collected. An aged Khoi woman found an unusual seed source: having chanced upon ants dragging seed, she followed them back to their nest and, on breaking it open, found a granary. Dr. Nortier's research was ultimately successful and he subsequently showed all the local farmers how to germinate their own seeds. The secret lay in scarifying the seed pods. Dr Nortier placed a layer of seeds between two mill stones and ground away some of the seed pod wall. Thereafter the seeds were easily propagated. Over the next decade the price of seeds soared to an astounding £80 a pound, the most expensive vegetable seed in the world, as farmers rushed to plant rooibos. Today, the seed is gathered by special sifting processes. Dr Nortier is today accepted as the father of the rooibos tea industry. Thanks to his research, rooibos tea became an iconic national beverage and then a globalised commodity. Rooibos tea production is today the economic mainstay of the Clanwilliam district. In 1948 The University of Stellenbosch awarded Dr Nortier an Honorary Doctorate D.Sc (Agria) in recognition for his valuable contribution to South African agriculture.
According to Record of Gaya cited in Memorabilia of the Three Kingdoms, the legendary queen Heo Hwang-ok, a princess of the Ayodhya married to King Suro of Gaya, brought the tea plant from India and planted it in Baegwolsan, a mountain in current Changwon.:3 However, it is a widely held view that systematic planting of tea bushes began with the introduction of Chinese tea culture by the Buddhist monks around the 4th century. Amongst some of the earliest Buddhist temples in Korea, Bulgapsa (founded in 384, in Yeonggwang), Bulhoesa (founded in 384, in Naju) and Hwaeomsa (founded in Gurye, in 544) claim to be the birthplace of Korean tea culture. Green tea was commonly offered to Buddha, as well as to the spirits of deceased ancestors. Tea culture continued to prosper during the Goryeo Dynasty, with the tea offering being a part of the biggest national ceremonies and tea towns were formed around temples. Seon-Buddhist manners of ceremony prevailed. During the Joseon Dynasty, however, Korean tea culture underwent secularization, along with the Korean culture itself. Korean ancestral rite jesa, also referred to as charye (차례; 茶禮, "tea rite"), has its origin in darye (다례; 茶禮, "tea rite"), the practice of offering tea as simple ancestral rites by the royal family and the aristocracy in Joseon.

A 2007 study concluded that green tea could hold promise as a new treatment for skin disorders such as psoriasis and dandruff. Researchers studied an animal model for inflammatory skin diseases, often characterized by patches of dry, red, flaky skin caused by the inflammation and overproduction of skin cells. Those treated with green tea showed slower growth of skin cells and the presence of a gene that regulates the cells' life cycles.
According to the National Cancer Institute, the polyphenols in tea have been shown to decrease tumor growth in both animal and laboratory studies. Researchers believe that it is the high level of polyphenols in tea that help kill cancerous cells and stop them from growing, although the exact mechanism by which tea inhibits and prevents cancerous cells is uncertain.
• One Chinese study found that men who drank more than three cups of tea a day reduced their risk of prostate cancer by 70 percent. In another study funded by the National Institute of Health, 79 men with prostate cancer were told to either drink 6 cups of green tea a day or 6 cups of water. After 3 to 8 weeks, the levels of prostate-specific antigen, a protein that may indicate cancer, were lower in the men who drank green tea than those who drank water. An indicator of inflammation, nuclear factor-kappaB, linked to cancer growth, was also lower in the men who drank the green tea.
