The Chinese scholar Lu Yu in his Cha Shung, the earliest treatise on tea, says, "When feeling hot, thirsty, depressed, suffering from headache, eye ache, fatigue of the four limbs or pains in the joints, one should only drink tea. Tea tempers the spirit, harmonizes the mind, dispels lassitude, relieves fatigue, awakens thought, prevents drowsiness and refreshes the body and mind." The Alzheimer's Society commented that "this study adds to previous research that suggests green tea might help to reduce the risk of Alzheimer's disease. However, the researchers used a far higher dose of the active green tea chemical than would ever be found in the human body. More research is needed to see whether green tea is protective at a much lower dose, and to understand the mechanism involved."
Caffeine: Everyone knows that caffeine is an external stimulant and raises blood pressure, and is actually toxic in nature (it may be fatal for some animals). Caffeine is also addictive and can have adverse effects on the liver and internal organs over the course of many years. That being said, it is the component of tea which makes it energizing and refreshing, which is why people are willing to risk it.
Ceremonial grade: This is the highest quality used mainly in tea ceremonies and Buddhist temples. This is stone-ground into a powder by granite stone mills. It is high-quality and expensive (~$100–140 for 100g). The unschooled drinker is unlikely to notice a large difference between Ceremonial and Premium grade. Ceremonial is characterized by subtle tones of "umami".
Since some of the bioactive compounds in green tea are anti-viral and anti-bacterial, in much the same way as green tea can kill bacteria in your mouth, it can also inhibit bacteria and viruses in your bloodstream and throughout the rest of your body. Similarly, green tea may inhibit viral and bacterial infection via your nasal passages. All this means that green tea may help prevent colds and the flu, and furthermore seems to be able to alleviate the symptoms of colds and the flu once you are sick.
Flavan-3-ols, the type of flavonoids found in green tea and other teas, provide many of the anti-aging effects of green tea. Catechins in various types of teas are the polyphenols that seem to have the most potent antioxidant effects, according to Natural Standard, the leading and most respected reviewer of herbal compounds. Matcha powder and hot water should be whisked together. It’s recommended that you use a tea strainer to sift the matcha into a bowl to avoid clumps. Then, add warm water and whisk it. (Traditionally this is done with a called a bamboo whisk called a chasen.) The whisking creates a foamy tea that can be poured into your cup. Some people add the powder to other hot liquids, like milk, to make a bright green latte. Here’s a video of how to make traditional matcha tea.
Because matcha is a powder made from ground tea leaves, it is not steeped in the traditional way. To prepare matcha, add between ½ teaspoon and 1 teaspoon of matcha green tea powder to a cup. Fill a kettle with water and heat to just short of boiling. Pour 6 ounces of the steaming water into the cup of matcha powder. Then, blend vigorously with a tea frother or bamboo matcha whisk, until the top is nice and foamy. You may need to experiment with the proportions of water and matcha powder to find your favored strength.
Studies on green tea’s impact on cancer have been mixed. But green tea is known to aid healthy cells in all stages of growth. There are some clues that green tea may help destroy cancer cells, but that research is still in its early stages, so you shouldn’t count on green tea to prevent cancer. In fact, the National Cancer Institute's web site says it "does not recommend for or against the use of tea to reduce the risk of any type of cancer."
Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
