Rooibos contains polyphenols that have anti-inflammatory, antiviral, and antimutagenic qualities. Polyphenols are organic chemicals that are often praised for their antioxidant capabilities. Studies suggest that regularly drinking organic red rooibos tea provides the liver with potent antioxidants, helping the organ to improve detoxification. Antioxidants act as scavengers of free radicals throughout the body, which are detrimental byproducts of cell metabolism that can cause cancer and heart diseases. Aspalathin and nothofagin are two other vital antioxidants that rooibos tea contains, making it a great beverage to boost your immune system and protect your body against all types of diseases.
In this traditional Japanese preparation, the powder is sifted through a fine mesh sieve and measured into a special bowl called a chawan. Hot water is added slowly while whisking briskly in a W pattern with a bamboo whisk called a chasen until smooth with a foamy froth on top. Matcha can have a slight astringent note and is usually served with a small sweet confection called a wagashi. Because of this complementary relationship with sweets and reputed green tea health benefits, it has become a favorite ingredient for chefs and confectioners.

A study suggests that theanine found in matcha tea acts as a neurotransmitter. It exerts a calming effect on the brain without causing any drowsiness. This soothing effect helped the Buddhist monks in maintaining deep concentration during their meditation sessions and was the main reason behind its popularity. Another study has revealed the anti-stress effects of theanine present in this tea, which assists in reducing the physiological and psychological stress responses by inhibiting the neuron excitation. Matcha tea is also believed to boost memory and concentration.
The taste is of matcha is strong. Some people describe it as grass or spinach-like, and it has an umami taste. Because of this it may be sweetened to improve its palatability. One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. The first ingredient was sugar, and it also contained powdered milk, so it was essentially like hot chocolate—but with cocoa swapped for matcha—something I wouldn’t recommend. Tea experts also warn that with matcha quality is key, and it comes at a cost. In other words, high quality, fresh, pure matcha is expensive. A low price tag can be a red flag for a poor quality product. Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
