In January 2015, we wrote about the rapid rise of matcha on the American beverage landscape and posed the question, “Have we reached maximum matcha saturation?” Three years later, we're living amid matcha croissants, matcha custard pie, matcha face masks, matcha lifestyle guides and $50 cups of matcha itself. Clearly, the answer was "No." But what is this powder we're whisking into green lattes, baking into doughnuts, blending into smoothies, and adding to our fish fillets?

According to a study published in the Journal of the American College of Nutrition, researchers found subjects consuming five or more cups of green tea per day were less likely to develop hypertension (high blood pressure) and diabetes, or die of cardiovascular disease or stroke. Researchers also found in animal studies that EGCG improved heart health by preventing “overload-induced cardiac hypertrophy” – or thickening of the heart muscles.
Matcha is made from shade-grown tea leaves that also are used to make gyokuro. The preparation of matcha starts several weeks before harvest and may last up to 20 days, when the tea bushes are covered to prevent direct sunlight.[better source needed] This slows down growth, stimulates an increase in chlorophyll levels, turns the leaves a darker shade of green, and causes the production of amino acids, in particular theanine. Only the finest tea buds are hand-picked. After harvesting, if the leaves are rolled up before drying as in the production of sencha, the result will be gyokuro (jade dew) tea. If the leaves are laid out flat to dry, however, they will crumble somewhat and become known as tencha (碾茶). Then, tencha may be de-veined, de-stemmed, and stone-ground to the fine, bright green, talc-like powder known as matcha.[better source needed]
This tea is a rich source of antispasmodic agents, which can ease severe stomach cramps and abdominal pains. This is mainly due to the activation of K+ (potassium) ions in the body without antagonizing the activities of calcium, according to a report published in the Basic & Clinical Pharmacology & Toxicology. This can reduce the presence of hyperactivity in the gastrointestinal tract, thus preventing diarrhea and other intestinal issues.
Some green tea varieties are better for weight loss than others. If you’re all about that green and on a weight-loss mission, you might want to choose Matcha green tea—the richest green tea source of nutrients and antioxidants. Registered dietitian Isabel K Smith explains why: “The whole leaf is ground and consumed as part of the beverage, as opposed to other (most) types of green tea where the leaves are steeped and then the tea is consumed.”
Koicha, or thick tea, requires significantly more matcha (usually about doubling the powder and halving the water): approximately 3.75 grams (amounting to 3 heaping chashaku scoops, or about one teaspoon) of matcha and approximately 40 ml (1.3 oz) of hot water per serving, or as many as six teaspoons to 3/4 cup of water. Because the resulting mixture is significantly thicker (with a similar consistency to liquid honey), blending it requires a slower, stirring motion that does not produce foam. Koicha is normally made with more expensive matcha from older tea trees (exceeding thirty years) and, thus, produces a milder and sweeter tea than usucha; it is served almost exclusively as part of Japanese tea ceremonies.

It depends not only on the processing method the tea producers use, but also on the cultivation practices the tea growers use. What time of year is the tea plucked? How is the plant pruned? What parts of the plant are plucked? Are the plants treated with chemicals or are they organically grown? What kind of heat is applied to the tea leaves to stop oxidation? How are the tea leaves shaped, rolled and dried? Are the leaves left whole or cut in smaller pieces?

Observational studies found a minor correlation between daily consumption of green tea and a 5% lower risk of death from cardiovascular disease. In a 2015 meta-analysis of such observational studies, an increase in one cup of green tea per day was correlated with slightly lower risk of death from cardiovascular causes. Green tea consumption may be correlated with a reduced risk of stroke. Meta-analyses of randomized controlled trials found that green tea consumption for 3–6 months may produce small reductions (about 2–3 mm Hg each) in systolic and diastolic blood pressures. A separate systematic review and meta-analysis of randomized controlled trials found that consumption of 5-6 cups of green tea per day was associated with a small reduction in systolic blood pressure (2 mmHg), but did not lead to a significant difference in diastolic blood pressure.
Rooibos is being heavily hyped by producers and distributors as a new health beverage. Unlike true “tea,” it is caffeine-free and low in tannins. It contains minimal amounts of calcium, potassium, iron, zinc, magnesium and much less fluoride than found in real teas. Studies have shown that Rooibos does contain antioxidants and therefore might have some of the health benefits of green tea, but very little research has confirmed this. I found only 17 scientific studies of Rooibos compared to more than 1,000 on green tea. So far, none suggest that Rooibos is the health equivalent of green tea.
Matcha (抹茶, Japanese pronunciation pronounced [mat.tɕa], English /ˈmætʃə/[i]) is finely ground powder of specially grown and processed green tea leaves. It is special in two aspects of farming and processing: the green tea plants for matcha are shade-grown for about three weeks before harvest and the stems and veins are removed in processing. During shaded growth, the plant Camellia sinensis produces more theanine and caffeine. The powdered form of matcha is consumed differently from tea leaves or tea bags, and is dissolved in a liquid, typically water or milk.

The rooibos plant is endemic to a small part of the western coast of the Western Cape province of South Africa. It grows in a symbiotic relationship with local micro-organisms. Scientists speculate that climate change may threaten the future survival of the plant and the R600-million (approximately €43-million in March 2017) rooibos industry. Some claim that increasing temperatures and decreasing rainfall may result in the extinction of the plant within the next century.
