Already nearly calorie free, matcha is a great addition to a weight loss program by tackling the problem from both sides. It boosts metabolism and burns fat. One recent study even suggested that matcha may help burn calories by four times. At the same time, matcha does not put any stress on the body. An animal study published in 2009 in “Phytomedicine” found that green rooibos tea helped regulate glucose metabolism, preventing increases in fasting blood glucose levels during the course of the five-week study. In 2009, King’s College researchers found that epicatechin may protect brain cells through mechanisms unrelated to its antioxidant ability, as epicatechin is one of the few flavonoids that can cross the blood-brain barrier. The King’s College researchers reported that somehow epicatechin protects brain cells from the negative effects of beta-amyloid plaques, although the exact mechanism of how this works is still not entirely know. One of the key components in Matcha is the amino acid L-theanine, which is found almost exclusively in shade-grown green teas like Matcha. In 1904, Benjamin Ginsberg ran a variety of experiments at Rondegat Farm, finally curing rooibos. He simulated the traditional Chinese method of making Keemun by fermenting the tea in barrels. The major hurdle in growing rooibos commercially was that farmers could not germinate the rooibos seeds. The seeds were hard to find and impossible to germinate commercially.
Matcha leaves are grown on green tea bushes kept under shade. The shade increases the amount of chlorophyll content in the leaves, which is what makes them bright green and full of nutrients. The leaves are picked by hand and the stems and veins are removed. According to Cheadle, the leaves are traditionally ground by granite stones into a super fine powder. “It takes an hour to grind the leaves, and it’s done in the dark to protect the nutrients,” she says.

In 1772, Swedish naturalist Carl Thunberg noted, "the country people made tea" from a plant related to rooibos or redbush. Traditionally, the local people would climb the mountains and cut the fine, needle-like leaves from wild rooibos plants. They then rolled the bunches of leaves into hessian bags and brought them down the steep slopes using donkeys. The leaves were then chopped with axes and bruised with hammers, before being left to dry in the sun.

This is a good strong matcha tea. It gets me going in the morning but without any of the jitteriness like from coffee. It has a strong rich flavor. Matcha, the focal point of the Japanese Tea Ceremony, is a fine powder made by grinding green tea leaves. Only the finest, young, shade-grown gyokuro tea leaves are used to create matcha. The leaves are plucked and laid out flat to dry. Veins are removed and the leaves, now called tencha, are carefully ground in granite mills until they become the precious powder. Easy preparation is achieved by placing 1 teaspoon of matcha per cup (or to taste) in a cup, adding a few drops of hot water (160-180F) and stirring with a spoon until a paste forms. Add the rest of the water and stir.
One of the biggest buzz words in nutrition, antioxidants are naturally occurring chemical compounds that prevent aging and chronic diseases. It also appears to contain more EGCG. ConsumerLab.com, an independent testing group, tested matcha products in 2015 and found that matcha provided 17 mg to 109 mg of EGCG per serving. By comparison, the average brewed green tea provides 25 to 86 mg per serving. While matcha powders contained more catechins per gram than brewed green tea, it was substantially more expensive: The lowest cost matcha powder was available at the time for $2.31 for 200mg of EGCG, compared to 27 cents for the same amount from brewed green tea. Compared to the powders, matcha in tea bags provides significantly less EGCG.
Tea plants that are specifically grown and used to make matcha are also typically shaded for two weeks to increase chlorophyll levels before the leaves are picked, further boosting concentration of healthy compounds. Matcha green tea tends to be more expensive than buying tea leaves for steeping, but a little goes a long way. Matcha is usually available in powder form and is a good choice for adding green tea’s taste and the benefits of green tea to recipes like smoothies, baked goods or ice cream.
But matcha didn’t skyrocket to celeb status on health merits alone. As we said back in 2011, wheatgrass is healthy, too, but we’re not seeing it in every other bakery and café. Matcha has flavor going for it—grassy, pleasantly vegetal, and slightly bitter—and a brilliant natural color that makes baked goods (like rainbow cookies) stand out from the crowd in busy bakeries (and on Instagram).
What I will tell you is that there are a LOT of options for these fitness teas. I did a lot of research before purchasing one, so my best advice to you is to make yourself a list of available options (see below), determine what you hope to gain from the experience (see even further below), and then research the specific ingredients for yourself. Here’s the moral of the story: They’re all very similar, but it’s important to be aware of what you are personally putting in your own body. “Specific detox teas offer added benefits in the additional ingredients,” says Villacorta. According to science, matcha is something of a miracle supplement. For one, it makes you feel good. One recent study examined the effects of the phytochemicals in green tea on mood and cognition. The combo of caffeine (present in most green teas) and L-theanine, an amino acid found in some teas, were found to “improve performance in attention-switching tasks and alertness, but to a lesser extent than caffeine alone,” partly because of how L-theanine chills you out.
Generally, the leaves undergo an oxidation (often termed "fermentation" in common tea processing terminology). This process produces the distinctive reddish-brown colour of rooibos and enhances the flavour. Unoxidised "green" rooibos is also produced, but the more demanding production process for green rooibos (similar to the method by which green tea is produced) makes it more expensive than traditional rooibos. It carries a malty and slightly grassy flavour somewhat different from its red counterpart.

Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan.
