Matcha (抹茶, Japanese pronunciation pronounced [mat.tɕa], English /ˈmætʃə/[1][i]) is finely ground powder of specially grown and processed green tea leaves. It is special in two aspects of farming and processing: the green tea plants for matcha are shade-grown for about three weeks before harvest and the stems and veins are removed in processing. During shaded growth, the plant Camellia sinensis produces more theanine and caffeine. The powdered form of matcha is consumed differently from tea leaves or tea bags, and is dissolved in a liquid, typically water or milk.

Scientists have also discovered that the antioxidants flavonoids may also protect the brain from oxidative stress. The scientists extrapolated that a human would need to drink about three liters of liquid infused with 0.5 percent of the catechins to get similar effects. However, because humans ingest other antioxidants in the form of vitamins and plant polyphenols, it’s likely that a much lower quantity could be effective in protecting memory.

Aspalathin is one of the rare antioxidants found in rooibos tea and it has a number of unique qualities. It can help balance blood sugar, improve insulin resistance and glucose absorption by muscles, and boosts insulin secretion from the pancreas. "Tea is a good source of compounds known as catechins and epicatechins, which are thought to be responsible for tea's beneficial health effects," says Dr. Howard Sesso, associate professor of medicine at Harvard Medical School and associate epidemiologist at Brigham and Women's Hospital. These compounds belong to a group of plant chemicals called flavonoids. Research suggests that flavonoids help quell inflammation, and that in turn may reduce plaque buildup inside arteries. Green tea has slightly higher amounts of these chemicals than black tea. Both black and green teas also contain modest amounts of caffeine, ranging from about 20 to 45 milligrams per 8-ounce cup. That's roughly half the amount of caffeine in the same amount of coffee.

University of Hong Kong researchers published a study in the August, 2009 Journal of Agricultural and Food Chemistry concerning green tea and bone health. When the bone cells of rats were exposed to green tea catechins, EGC in particular stimulated an enzyme that promotes bone growth by 79 percent. The catechins also increased bone mineralization and weakened the activity of cells that reabsorb bone rather than form it. (10)


Koicha, or thick tea, requires significantly more matcha (usually about doubling the powder and halving the water): approximately 3.75 grams (amounting to 3 heaping chashaku scoops, or about one teaspoon) of matcha and approximately 40 ml (1.3 oz) of hot water per serving, or as many as six teaspoons to 3/4 cup of water. Because the resulting mixture is significantly thicker (with a similar consistency to liquid honey), blending it requires a slower, stirring motion that does not produce foam. Koicha is normally made with more expensive matcha from older tea trees (exceeding thirty years) and, thus, produces a milder and sweeter tea than usucha; it is served almost exclusively as part of Japanese tea ceremonies.
Generally, the leaves undergo an oxidation (often termed "fermentation" in common tea processing terminology). This process produces the distinctive reddish-brown colour of rooibos and enhances the flavour. Unoxidised "green" rooibos is also produced, but the more demanding production process for green rooibos (similar to the method by which green tea is produced) makes it more expensive than traditional rooibos. It carries a malty and slightly grassy flavour somewhat different from its red counterpart.[3]

Matcha, like other green teas, contains a class of antioxidants called catechins. Matcha is high in a catechin called EGCG (epigallocatechin gallate), which is believed to have cancer-fighting effects on the body. Studies have linked green tea to a variety of health benefits, like helping to prevent heart disease, type 2 diabetes and cancer, and even encouraging weight loss. However, it’s important to note that much of this research isn’t from clinical trials that show green tea causes a benefit. Instead, it’s largely from population-based studies, where researchers look at groups of people who drink green tea and compare their health outcomes to groups that don’t drink it. Studies have shown associations between tea and better health, but causation is not yet proven. Matcha is even less studied than brewed green tea.

The Alzheimer's Society commented that "this study adds to previous research that suggests green tea might help to reduce the risk of Alzheimer's disease. However, the researchers used a far higher dose of the active green tea chemical than would ever be found in the human body. More research is needed to see whether green tea is protective at a much lower dose, and to understand the mechanism involved."
Rooibos is sometimes used as substitute for milk with colicky babies, says Alvaro Viljoen, PhD, of the department of pharmacy at the University of the Witwatersrand. Today, an estimated 2.5 million tons of tea leaves are produced each year throughout the world, with 20 percent of that being green tea. Green tea didn’t become popular or widely distributed outside of Asia until about the early 1900s. China, other countries in Asia, countries in North Africa, the United States and Europe currently consume the most green tea worldwide.
It is a natural, organic green tea which has been the heart of the famous Japanese tea ceremony for over 900 years. In 2013, global production of green tea was approximately 1.7 million tonnes, with a forecast to double in volume by 2023.[30] As of 2015, China provided 80% of the world's green tea market, leading to its green tea exports rising by 9% annually, while exporting 325,000 tonnes in 2015.[31] In 2015, the US was the largest importer of Chinese green tea (6,800 tonnes), an increase of 10% over 2014, and Britain imported 1,900 tonnes, 15% more than in 2014.[31] In 2015, Kenya was the largest exporter of black tea in the world (443,000 tonnes).[31]
