I'm a mom of two boys and live in Larkspur, CA, but still call South Africa my home. I grew up (literally) with Rooibos Tea: a naturally caffeine free beverage that has been used by generations of South Africans for anything from a delicious anytime drink, to a soothing beverage to calm Baby's colic, to putting in the bath for dry & flaky skin. You name it, Rooibos is the cure.
Instead of being rolled, shaped and dried like traditional green tea leaves, the leaves destined to become Matcha are laid flat to dry. Grinding the leaves into Matcha is a slow process. If the mill stones overheat, the delicate green tea leaves might become damaged, which alters the flavor and taste. For reference, it takes about one hour to grind 30g of Matcha.
When I was conducting research into South Africa’s native herbs, I was served rooibos everywhere I went. Red in the cup, fragrant to the nose and pleasing to the palate, rooibos soon became a favorite. In every meeting, I looked forward to that red tea, which is one of the only native herbs of South Africa to achieve significant commercial status. My wife and I keep it in the tea cupboard at home, and we often turn to rooibos when we want a cup of tea without caffeine.

The taste is of matcha is strong. Some people describe it as grass or spinach-like, and it has an umami taste. Because of this it may be sweetened to improve its palatability. One client was thrilled to tell me that he was drinking matcha, but instead of traditional matcha powder, he was drinking a powdered mix. Honestly, this seemed to help out with my acne. It depends not only on the processing method the tea producers use, but also on the cultivation practices the tea growers use. What time of year is the tea plucked? How is the plant pruned? What parts of the plant are plucked? Are the plants treated with chemicals or are they organically grown? What kind of heat is applied to the tea leaves to stop oxidation?
