Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
Green tea also seems to boost physical performance, increase exercise endurance, and decrease reaction time, and there are many, many such studies showing these effects from caffeine, although other ingredients in green tea may aid this effect. Caffeine, and green tea’s, ability to mobilize fatty acids in fat tissue to make them more easily available for use as energy also seems to aid physical performance. In one study, caffeine was shown to significantly increase physical performance (exercise endurance and exertion). The antioxidants in green tea may also help prevent tissue damage during physical exertion as well.
Matcha powder and hot water should be whisked together. It’s recommended that you use a tea strainer to sift the matcha into a bowl to avoid clumps. Then, add warm water and whisk it. (Traditionally this is done with a called a bamboo whisk called a chasen.) The whisking creates a foamy tea that can be poured into your cup. This tea is a rich source of antispasmodic agents, which can ease severe stomach cramps and abdominal pains. This is mainly due to the activation of K+ (potassium) ions in the body without antagonizing the activities of calcium, according to a report published in the Basic & Clinical Pharmacology & Toxicology. This can reduce the presence of hyperactivity in the gastrointestinal tract, thus preventing diarrhea and other intestinal issues.
Our green tea is passed through a steaming treatment before rolling. Steaming applies light heat to the leaves to help halt the oxidation process before the leaves are rolled into shape. Steaming also helps expose the fresh, grassy flavor of the leaf. Green tea leaves are not allowed to oxidize after rolling, which is why they remain light color and flavor.

Certain studies indicate that intake of flavan-3-ols and/or anthocyanidins found in green tea may improve glycemic control and help normalize blood sugar levels. Due to its anti-inflammatory properties, green tea is believed to be beneficial for those who are at-risk or diagnosed with type 2 diabetes. Green tea’s catechins, especially EGCG, appear to have anti-obesity and antidiabetic effects.
Studies on green tea’s impact on cancer have been mixed. But green tea is known to aid healthy cells in all stages of growth. There are some clues that green tea may help destroy cancer cells, but that research is still in its early stages, so you shouldn’t count on green tea to prevent cancer. In fact, the National Cancer Institute's web site says it "does not recommend for or against the use of tea to reduce the risk of any type of cancer."

A study in Annals of Internal Medicine found consumption of green tea (as well as black tea and coffee), was associated with a reduced risk of type 2 diabetes.
There are three main varieties of tea: green, black, and oolong. All three varieties are made from the leaves of the same species of plant called Camellia sinensis; the difference is in how the tea leaves are processed. Green tea is made from unfermented leaves, while oolong tea is made from partially fermented leaves and black tea is fully fermented.
Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan. The shading technique imparts a sweeter flavor, and produces a particularly rich color thanks to the higher amounts of chlorophyll in the shaded leaf. Gyokuro tea is associated with the Uji region, the first tea-growing region in Japan. It is often made using smaller-leaf cultivars of the tea plant.
University of Hong Kong researchers published a study in the August, 2009 Journal of Agricultural and Food Chemistry concerning green tea and bone health. When the bone cells of rats were exposed to green tea catechins, EGC in particular stimulated an enzyme that promotes bone growth by 79 percent. The catechins also increased bone mineralization and weakened the activity of cells that reabsorb bone rather than form it. (10)

According to a study published in the European Journal of Clinical Nutrition, the polyphenols found in green tea provide six times the radical-quenching potential of those found in black tea.
"It's only in the last 10 year that Western science has tried to look at antioxidant activities of tea," says Dave Ringer, PhD, scientific program director at the ACS. "It's a young science. Generally, it is felt that tea can inhibit the initiation of cancer and delay its progression in animal studies. But we don't really have large well-controlled epidemiological studies to look at this yet [in humans], because you need to correct for the effects of other dietary components."
Still, there have been some interesting findings. A 2014 study looked at 25 randomized controlled trials on the link between tea and blood pressure and reported that when people drank tea—especially green tea—for 12 weeks, their blood pressure dropped significantly. A 2011 study reported that drinking green tea appeared to be linked with lower levels of bad LDL cholesterol, but more research is needed. Because matcha is a type of green tea, they may share similar benefits, but there’s not enough research to make that claim.
Over a thousand years ago, matcha came to Japan as an aid to meditation practice. During long hours of sitting, monks would drink matcha to remain alert yet calm. Modern science has recently confirmed the lessons of centuries of tradition. Matcha is rich in L-Theanine, a rare amino acid that actually promotes a state of relaxation and well-being by acting upon the brains functioning. While stress can induce beta waves an excited, more agitated state, L-Theanine creates alpha waves, which lead to a state of relaxed alertness. And while L-Theanine is common in all tea, matcha may contain up to five times more of this amino acid than common black and green teas.

It is a natural, organic green tea which has been the heart of the famous Japanese tea ceremony for over 900 years. The Buddhist monks honored matcha tea as the ‘health elixir’ for its potential to heighten the concentration and enhance metabolism. Originating in China in the 9th century, this was used as a drug for curing various ailments. However, its word somehow got elapsed in China. It was only after the Zen Buddhist monks from Japan realized its true potential at the end of the twelfth century, the perfection in the cultivation of these leaves picked up. Matcha is still scarcely grown accounting for just 0.6% of total tea yield.
