The Alzheimer's Society commented that "this study adds to previous research that suggests green tea might help to reduce the risk of Alzheimer's disease. However, the researchers used a far higher dose of the active green tea chemical than would ever be found in the human body. More research is needed to see whether green tea is protective at a much lower dose, and to understand the mechanism involved."
Matcha literally means "powdered tea." When you order traditional green tea, components from the leaves get infused into the hot water, then the leaves are discarded. With matcha, you’re drinking the actual leaves, which have been finely powdered and made into a solution, traditionally by mixing about a teaspoon of matcha powder with a third cup of hot water (heated to less than a boil), which is then whisked with a bamboo brush until it froths.
Researchers from the Netherlands confirmed in a recent study that two green tea compounds, L-theanine and caffeine, can significantly boost levels of attention and alertness, building on what is already known about the brain benefits of green tea. The drink is less likely to make you jittery and anxious than other energy-boosting drinks, because it contains lower levels of caffeine than other teas or coffee. In another study published in the American Journal of Clinical Nutrition, researchers discovered that drinking just one cup of green tea a day made people age 55 and older 38 percent less likely to experience a decline in their mental abilities. Drinking a second cup daily made them 54 percent less likely to show mental declines.
According to a study published in the journal Chinese Medicine, many of the beneficial biological effects of flavonoids on heart health seem to be due to cell-signaling effects that lower inflammation. Because matcha preparation uses ground tea leaves that cannot be removed after steeping, the caffeine content in a cup of matcha is much higher than that of a cup of tea prepared using tea bags or leaves. However, the exact caffeine content may vary depending on the ratio of water to matcha powder used. Matcha contains less than half the amount of caffeine per cup than in a similar-sized cup of coffee.

Green Tea comes from Camellia sinensis leaves that are immediately steamed or pan-fired rather than being exposed to air so that no oxidation occurs. This special handling makes for a more delicate brew that is typically lower in caffeine than black and Oolong teas. Although amounts vary, green teas are highest in polyphenols known as EGCG, which is why so many make it part of their healthy lifestyle.
Green tea is processed using either artisanal or modern methods. Sun-drying, basket or charcoal firing, or pan-firing are common artisanal methods. Oven-drying, tumbling, or steaming are common modern methods. Processed green teas, known as aracha, are stored under low humidity refrigeration in 30- or 60-kg paper bags at 0–5 °C (32–41 °F). This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Finally, each lot will be blended according to the blending order by the tasters and packed for sale.
Since green tea is less oxidized than its black tea cousin, it is technically fresher and more delicate, so it should be consumed more quickly for maximum flavor. Green tea is best consumed within six months to a year of purchase. You should also take care to store your green tea in a cool, dark place, away from light, oxygen, moisture and fragrant pantry companions like coffee or spices.
Tea culture of Korea was actively suppressed by the Japanese during the Japanese forced occupation period (1910‒1945), and the subsequent Korean War (1950‒1953) made it even harder for the Korean tea tradition to survive. The restoration of the Korean way of tea began in the 1970s, around Dasolsa. Commercial production of green tea in South Korea only began in the 1970s,. By 2012 the industry was producing 20% as much tea as Taiwan and 3.5% as much as Japan. Green tea is not as popular as coffee or other types of Korean teas in modern South Korea. The annual consumption per capita of green tea in South Korea in 2016 was 0.16 kg (0.35 lb), compared to 3.9 kg (8.6 lb) coffee. Recently however, as the coffee market reached saturation point, South Korean tea production doubled during 2010‒2014, as did tea imports during 2009-2015, despite very high tariff rate (513.6% for green tea, compared to 40% for black tea, 8% for processed/roasted coffee, and 2% for raw coffee beans).
