Do you know what the term “cha” means, which is often found in the names of various qualities of green tea such as gyokurocha, sencha, bancha, matcha, and houjicha? It simply means “tea”, and tea is extremely popular all over India as “cha” (in Bengal & adjacent states) and “chai” in other areas. Just some fun facts for you to share with other tea lovers over your next cup of green tea!
Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
The South African Department of Trade and Industry issued final rules on 6 September 2013 that protects and restricts the use of the names "rooibos", "red bush", "rooibostee", "rooibos tea", "rooitee" and "rooibosch" in that country, so that the name cannot be used for things not derived from the Aspalathus linearis plant. It also provides guidance and restrictions for how products which include Rooibos, and in what measures, should use the name "rooibos" in their branding.
Since some of the bioactive compounds in green tea are anti-viral and anti-bacterial, in much the same way as green tea can kill bacteria in your mouth, it can also inhibit bacteria and viruses in your bloodstream and throughout the rest of your body. Similarly, green tea may inhibit viral and bacterial infection via your nasal passages. All this means that green tea may help prevent colds and the flu, and furthermore seems to be able to alleviate the symptoms of colds and the flu once you are sick.
In China during the Tang Dynasty (618–907), tea leaves were steamed and formed into tea bricks for storage and trade. The tea was prepared by roasting and pulverizing the tea, and decocting the resulting tea powder in hot water, then adding salt. During the Song Dynasty (960–1279), the method of making powdered tea from steam-prepared dried tea leaves, and preparing the beverage by whipping the tea powder and hot water together in a bowl became popular.
I really like this stuff! I"ve used green tea powder for smoothies for years and I find this brand to be effective at keeping sustained energy throughout the day. It has a very definitive taste to it, but it's easy to cover up if you don't like it. (I don't mind the taste, but my protein powder pretty much overwhelms it.) It's definitely worth trying for a more sustained, less jittery caffeine boost.

Why don’t you just stick to the recommended amount?” I responded with “It’s just TEA — what’s the worst that could happen?” On day 3, I learned. I had decided to give up coffee during my 28 days, both as a way to save my sanity and excretory system and as a way to wean myself out of my coffee habit. That was really stupid. By day 3, I was experiencing a horrifying caffeine headache and a rough case of the spins. I was also literally exhausted and finally feeling the ~desired effects~ of the detox (frequent trips to the bathroom, to put it lightly), so I was dealing with an excess of that on top of my other horrible side effects. Do I blame the tea? Not even a little. I blame myself for overindulging in too much of a good thing. From there on out, I decided to follow the rules.
Word of Caution: Despite all of these health benefits of rooibos tea, there can be a downside for some people. Since rooibos is so powerful, it can interfere with treatments for various conditions, including chemotherapy for cancer patients. Also, rooibos has shown estrogenic activities in certain studies, so it might not be a good idea to use if you have hormone-sensitive cancer like breast cancer.

Green tea is processed using either artisanal or modern methods. Sun-drying, basket or charcoal firing, or pan-firing are common artisanal methods. Oven-drying, tumbling, or steaming are common modern methods. Processed green teas, known as aracha, are stored under low humidity refrigeration in 30- or 60-kg paper bags at 0–5 °C (32–41 °F). This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Finally, each lot will be blended according to the blending order by the tasters and packed for sale.
To cut down on aches and pains, try to sip four cups of green tea a day. The tea contains quercetin, a chemical compound that acts as a powerful anti-inflammatory and antioxidant. In a recent study conducted at Case Western Reserve University, researchers gave mice the equivalent of four cups of green tea a day, then gave them a substance that would normally produce rheumatoid arthritis. The tea-drinking mice were far less likely to develop arthritis than mice that drank water. According to the Iowa Women’s Health Study, women who drank more than three cups of tea a day were 60 percent less likely to develop rheumatoid arthritis than non tea drinkers. Other research has found that tea’s polyphenols—antioxidant properties—are also anti-inflammatory and improve arthritis-related immune responses. "It's only in the last 10 year that Western science has tried to look at antioxidant activities of tea," says Dave Ringer, PhD, scientific program director at the ACS. "It's a young science. Generally, it is felt that tea can inhibit the initiation of cancer and delay its progression in animal studies. Green tea contains significant amounts of flavonoids, antioxidants that protect against heart disease by slowing the breakdown of LDL cholesterol, preventing blood clots, and improving blood vessel function. The benefits of green tea also include associations with lower cholesterol and lower rates of artery blockages. People who drink a cup or two a day have a 46 percent lower risk of developing narrowed arteries.
