The rooibos plant is endemic to a small part of the western coast of the Western Cape province of South Africa. It grows in a symbiotic relationship with local micro-organisms. Scientists speculate that climate change may threaten the future survival of the plant and the R600-million (approximately €43-million in March 2017) rooibos industry. Some claim that increasing temperatures and decreasing rainfall may result in the extinction of the plant within the next century.
It is a natural, organic green tea which has been the heart of the famous Japanese tea ceremony for over 900 years. The Buddhist monks honored matcha tea as the ‘health elixir’ for its potential to heighten the concentration and enhance metabolism. Originating in China in the 9th century, this was used as a drug for curing various ailments. However, its word somehow got elapsed in China. It was only after the Zen Buddhist monks from Japan realized its true potential at the end of the twelfth century, the perfection in the cultivation of these leaves picked up. Matcha is still scarcely grown accounting for just 0.6% of total tea yield.
Indigenous to the Western Cape of South Africa, rooibos (Aspalathus linearis) is a shrub with long, needle-shaped leaves that turn red upon fermentation. When you drive through the countryside north of Cape Town, you see rooibos everywhere. Rooibos is a traditional beverage of the native Khoi people of the Cape area, though it has become more popular in recent years due to word spreading about its high antioxidant value. Traditionally, the native people harvest the leaves, bruise them with hammers, ferment them and dry them. The result is a red, astringent tea that refreshes and does not cause jitters.

There are also several harmful effects of green tea over-consumption that are possible. University of Hong Kong researchers published a study in the August, 2009 Journal of Agricultural and Food Chemistry concerning green tea and bone health. When the bone cells of rats were exposed to green tea catechins, EGC in particular stimulated an enzyme that promotes bone growth by 79 percent. Day 2: I hopped out of bed, made my 2nd cup of tea, then went about my day. As the hours wore on, though, I grew discouraged. Basically, tea time may not be for you. I know we all want “quick results,” but instead a gradual change in diet is best. Since my last tea scare, I’ve actually gotten accustomed to simply eating better. Stuff like eliminating dairy has helped with my “fupa” (lower belly pudge), and overall bloat. Limiting my red meat intake has also helped. Leaner meats like turkey, chicken breast and egg whites have helped me keep inches off and feel more energized.

Along with caffeine, which gives green tea its characteristic taste, bitterness, and stimulating effect, green tea is also rich in a group of chemicals, called catechin polyphenols (commonly known as tannins, which contribute to bitter taste and astringency). These catechin polyphenols include catechin, epicatechin, epicatechin gallate (ECG), epigallocatechin gallate (EGCG), and various proanthocyanidins. Sejak (세작; 細雀; lit. "thin sparrow"), or dumul-cha (두물차; lit. "second flush tea"), is made of hand-picked leaves plucked after gogu (20–21 April) but before ipha (5–6 May). The tea is also called jakseol (작설; 雀舌; lit. "sparrow tongue") as the tea leaves are plucked when they are about the size of a sparrow's tongue. The ideal steeping temperature for sejak tea is 60–70 °C (140–158 °F).
Matcha typically has more caffeine content than green tea, similar caffeine to black tea, and less caffeine than brewed coffee. Because matcha is produced from shade-grown tea bushes, the tea leaves tend to retain more of their caffeine content. In addition, since you’re consuming the ground tea leaf when sipping matcha, you’re ingesting more caffeine content than you would from the extraction of steeped green or black tea leaves. Like all drinks cultivated from caffeinated plants, however, a specific level of caffeine per cup of matcha tea will depend on the how the matcha was processed and prepared. In 1994, Burke International registered the name "Rooibos" with the US Patent and Trademark Office, thus establishing a monopoly on the name in the United States at a time when it was virtually unknown there. When the plant later entered more widespread use, Burke demanded that companies either pay fees for use of the name, or cease its use. In 2005, the American Herbal Products Association and a number of import companies succeeded in defeating the trademark through petitions and lawsuits; after losing one of the cases, Burke surrendered the name to the public domain.
