Tea culture of Korea was actively suppressed by the Japanese during the Japanese forced occupation period (1910‒1945), and the subsequent Korean War (1950‒1953) made it even harder for the Korean tea tradition to survive. The restoration of the Korean way of tea began in the 1970s, around Dasolsa. Commercial production of green tea in South Korea only began in the 1970s,. By 2012 the industry was producing 20% as much tea as Taiwan and 3.5% as much as Japan. Green tea is not as popular as coffee or other types of Korean teas in modern South Korea. The annual consumption per capita of green tea in South Korea in 2016 was 0.16 kg (0.35 lb), compared to 3.9 kg (8.6 lb) coffee. Recently however, as the coffee market reached saturation point, South Korean tea production doubled during 2010‒2014, as did tea imports during 2009-2015, despite very high tariff rate (513.6% for green tea, compared to 40% for black tea, 8% for processed/roasted coffee, and 2% for raw coffee beans).
It all started out at the top of the year when I ordered a very popular detox tea that I saw promoted heavily on Instagram. I’d seen this product advertised by just about every pretty face and snatched body in the industry. I read no real complaints, however, when I went to the company’s website, I did notice a few customer reviews warning new drinkers to steep their tea for less than the recommended time. Basically, the instructions said to steep for four minutes, but some suggested only steeping one to two minutes max. Ladies also warned that bad cramping was inevitable, but I thought, as a grown woman, what cramp have I not experienced by now?
In 2004, scientists at the University of Newcastle studied the effects of black and green tea on Alzheimer’s disease. In laboratory studies, both teas prevented the breakdown of acetylcholine, the neurotransmitter strongly linked with memory. The teas also inhibited enzymes known as BuChE and beta-secretase. These enzymes are found in protein deposits found in the brain of Alzheimer’s patients. (7)
It depends not only on the processing method the tea producers use, but also on the cultivation practices the tea growers use. What time of year is the tea plucked? How is the plant pruned? What parts of the plant are plucked? Are the plants treated with chemicals or are they organically grown? What kind of heat is applied to the tea leaves to stop oxidation? How are the tea leaves shaped, rolled and dried? Are the leaves left whole or cut in smaller pieces?
A study suggests that theanine found in matcha tea acts as a neurotransmitter. It exerts a calming effect on the brain without causing any drowsiness. This soothing effect helped the Buddhist monks in maintaining deep concentration during their meditation sessions and was the main reason behind its popularity. Another study has revealed the anti-stress effects of theanine present in this tea, which assists in reducing the physiological and psychological stress responses by inhibiting the neuron excitation. Matcha tea is also believed to boost memory and concentration.
Burdock Root - a member of the daisy family that originated in Eurasia - is now firmly established as a naturalized plant in North America. Herbalists value burdock for helping to detoxify the liver. The root is served as a food in Japan, where it is known as gobo. Resembling a long brown carrot, burdock can be prepared in the same way you might enjoy a carrot, such as fresh juice or in a stir-fry dish.
Matcha tea rich in EGCG helps fight various bacterial, viral, and fungal infections. According to a research study, EGCG binds to the lipid membrane and exerts inhibitory action against the growth of various human pathogens. These include influenza A virus, hepatitis B, and C virus, herpes virus, adenovirus Staphylococcus aureus bacteria, and Candida albicans yeast.
Because matcha is made from high-quality tea, and the whole leaves are ingested, it’s a more potent source of nutrients than steeped green tea. In addition to providing small amounts of vitamins and minerals, matcha is rich in antioxidants called polyphenols, which have been tied to protection against heart disease and cancer, as well as better blood sugar regulation, blood pressure reduction, and anti-aging. Another polyphenol in matcha called EGCG has been shown in research to boost metabolism, and slow or halt the growth of cancer cells.
This tea is a rich source of antispasmodic agents, which can ease severe stomach cramps and abdominal pains. This is mainly due to the activation of K+ (potassium) ions in the body without antagonizing the activities of calcium, according to a report published in the Basic & Clinical Pharmacology & Toxicology. This can reduce the presence of hyperactivity in the gastrointestinal tract, thus preventing diarrhea and other intestinal issues.
Generally, lower-quality green teas are steeped hotter and longer while higher-quality teas are steeped cooler and shorter, but usually multiple times (2-3 typically). Higher-quality teas like gyokuro use more tea leaves and are steeped multiple times for short durations. Steeping too hot or too long results in the release of excessive amounts of tannins, leading to a bitter, astringent brew, regardless of initial quality. The brew’s taste is also affected by the steeping technique; two important ones are to warm the steeping container beforehand to prevent the tea from immediately cooling down, and to leave the tea leaf in the pot and gradually add more hot water during consumption.
Matcha: This is the leftover powder of green tea, also called “Dust”. It makes a beautifully green-colored tea and forms a lot of foam (froth), but has a weaker aroma than the leafy varieties. This variety of green tea is very popular in traditional ceremonies and is sometimes also called Ceremonial Green Tea. It is far less bitter than the other three varieties, so when you sip it, it seems to hold a natural sweetness, particularly if you are familiar with the other varieties.
Shade grown: All matcha is made from shade-grown tea leaves—a labor-intensive process where tea bushes are protected from the sun and light is filtered to the bushes in a very controlled manor. Shading boosts the chlorophyll production in the plant, giving the leaves a rich green color. The lack of sun reduces the plant’s photosynthesis of the leaves, which in turn alters the naturally occurring levels of caffeine, flavanols, sugars, antioxidants, and theanine. By controlling the sun exposure, tea producers can significantly alter the chemical make-up and flavor of the final tea leaves.
