Polyphenols found in green tea include epigallocatechin gallate (EGCG), epicatechin gallate, epicatechins and flavanols, which are under laboratory research for their potential effects in vivo. Other components include three kinds of flavonoids, known as kaempferol, quercetin, and myricetin. Although the mean content of flavonoids and catechins in a cup of green tea is higher than that in the same volume of other food and drink items that are traditionally considered to promote health, flavonoids and catechins have no proven biological effect in humans.
Scientists have also discovered that the antioxidants flavonoids may also protect the brain from oxidative stress. The scientists extrapolated that a human would need to drink about three liters of liquid infused with 0.5 percent of the catechins to get similar effects. However, because humans ingest other antioxidants in the form of vitamins and plant polyphenols, it’s likely that a much lower quantity could be effective in protecting memory.
One of the most unexpected health benefits of matcha tea, is that drinkers experience a boost of energy throughout the day. In one study, researchers had thought that this was from the caffeine in matcha, but they found that it was actually the combination of matcha’s natural properties. Another recent study found that matcha even improved physical endurance by 24%.
Generally, the leaves undergo an oxidation (often termed "fermentation" in common tea processing terminology). This process produces the distinctive reddish-brown colour of rooibos and enhances the flavour. Unoxidised "green" rooibos is also produced, but the more demanding production process for green rooibos (similar to the method by which green tea is produced) makes it more expensive than traditional rooibos. It carries a malty and slightly grassy flavour somewhat different from its red counterpart.
Although numerous claims have been made for the health benefits of green tea, human clinical research has not provided conclusive evidence of any effects. In 2011, a panel of scientists published a report on the claims for health effects at the request of the European Commission: in general they found that the claims made for green tea were not supported by sufficient scientific evidence. Although green tea may enhance mental alertness due to its caffeine content, there is only weak, inconclusive evidence that regular consumption of green tea affects the risk of cancer or cardiovascular diseases, and there is no evidence that it benefits weight loss.
"It's only in the last 10 year that Western science has tried to look at antioxidant activities of tea," says Dave Ringer, PhD, scientific program director at the ACS. "It's a young science. Generally, it is felt that tea can inhibit the initiation of cancer and delay its progression in animal studies. But we don't really have large well-controlled epidemiological studies to look at this yet [in humans], because you need to correct for the effects of other dietary components."
Another benefit of green tea it’s is lower in caffeine than most other teas, so you may be able to drink the five cups a day that lowered psychological stress in a large group of Japanese people in a recent study done at Sendai’s Tohoku University Graduate School of Medicine. The leaves are used to make a herbal tea that is called by the names: rooibos, bush tea (especially in Southern Africa), or redbush tea (predominantly in Great Britain). On 17 June 2011, at Charles de Gaulle airport in Paris, France, radioactive cesium of 1,038 becquerels per kilogram was measured in tea leaves imported from Shizuoka Prefecture, Japan as a result of the Fukushima Daiichi nuclear disaster on 11 March, which was more than twice the restricted amount in the European Union of 500 becquerels per kilogram. The government of France announced that they rejected the leaves, which totaled 162 kilograms (357 lb).
The use of matcha in modern drinks has also spread to North American cafés, such as Starbucks, which introduced "Green Tea Lattes" and other matcha-flavoured drinks after matcha became successful in their Japanese store locations. As in Japan, it has become integrated into lattes, iced drinks, milkshakes, and smoothies. A number of cafes have introduced lattes and iced drinks using matcha powder. It has also been incorporated into alcoholic beverages such as liqueurs and matcha green tea beers.
In 1994, Burke International registered the name "Rooibos" with the US Patent and Trademark Office, thus establishing a monopoly on the name in the United States at a time when it was virtually unknown there. When the plant later entered more widespread use, Burke demanded that companies either pay fees for use of the name, or cease its use. In 2005, the American Herbal Products Association and a number of import companies succeeded in defeating the trademark through petitions and lawsuits; after losing one of the cases, Burke surrendered the name to the public domain.
