Indigenous to the Western Cape of South Africa, rooibos (Aspalathus linearis) is a shrub with long, needle-shaped leaves that turn red upon fermentation. When you drive through the countryside north of Cape Town, you see rooibos everywhere. Rooibos is a traditional beverage of the native Khoi people of the Cape area, though it has become more popular in recent years due to word spreading about its high antioxidant value. Traditionally, the native people harvest the leaves, bruise them with hammers, ferment them and dry them. The result is a red, astringent tea that refreshes and does not cause jitters.
Ceremonial grade: Ceremonial grade is the highest quality matcha from the most carefully cultivated buds and leaves. Ceremonial grade is given the most attention to detail during processing to yield the freshest, most delicate tasting, and smoothest ground matcha. Ceremonial grade is meant to be enjoyed on its own, with no other sweeteners or additives, to really enjoy and appreciate the intended flavor.
Matcha powder and hot water should be whisked together. It’s recommended that you use a tea strainer to sift the matcha into a bowl to avoid clumps. Then, add warm water and whisk it. (Traditionally this is done with a called a bamboo whisk called a chasen.) The whisking creates a foamy tea that can be poured into your cup. Some people add the powder to other hot liquids, like milk, to make a bright green latte. Here’s a video of how to make traditional matcha tea.
Gyokurocha: In this variety, the tea leaves are plucked from the tip of the branches. When brewed, the color is clear green. Being picked from the tip, this variety has the best taste and fragrance, and this variety is also considered the best in terms of health. Furthermore, it is less bitter, as it contains lesser tannin and caffeine since the plucked leaves are younger and still budding. The only drawback to gyokurocha is the high cost, but as we all know, truly high-quality solutions for health never come cheap!
Matcha is green tea that has been specially grown and processed. Twenty days before harvest, the leaves are shaded from direct sunlight, which amps up the chlorophyll levels (and accounts for that Kermit green color) and increases the production of the amino acid L-Theanine, which is thought to promote relaxation even as the tea gives you a caffeine jolt. The leaves are hand-picked and laid out to dry. Once they are rid of their veins and stems, they’re stone-ground into what is finally matcha.
It’s become such a fashionable beverage that, last summer, the New York Post ran a story about how Victoria’s Secret models were flocking to Cha Cha Matcha, a hipster spot fluent in the preparation of various matcha-based miracle potions. A search for where to get “matcha” in New York, New York on Yelp yielded some 1400 plus results. Even mass market coffee purveyors like Starbucks have made matcha their mantra, with a vast range of offerings to cash in on the craze.
Unsweetened brewed green tea is a zero calorie beverage. The caffeine contained in a cup of tea can vary according to the length of infusing time and the amount of tea infused. In general, green tea contains a relatively small amount of caffeine (approximately 20-45 milligrams per 8 ounce cup), compared with black tea, which contains about 50 milligrams and coffee with 95 milligrams per cup.
contains antioxidants, including polyphenols such as epigallocatechin gallate (EGCG), which can powerfully quench damaging “free radicals,” metabolic byproducts that are chemically reactive and can damage cells. According to a study published in the European Journal of Clinical Nutrition, the polyphenols found in green tea provide six times the radical-quenching potential of those found in black tea.
Furthermore, green tea also contains amino acids such as theanine, butyric acid, and lignin; xanthine alkaloids such as adenine, dimethylxanthine, theobromine, theophylline, and xanthine; pectin (also found in fruits); saccharides (sugar), chlorophyll, and triterpene saponins. Vitamins, like vitamin A, B1, B2, B3, C, and E are also found in green tea. After that impressive list, perhaps you can begin to understand how packed green tea is with nutrients and beneficial components.
Green tea is processed using either artisanal or modern methods. Sun-drying, basket or charcoal firing, or pan-firing are common artisanal methods. Oven-drying, tumbling, or steaming are common modern methods. Processed green teas, known as aracha, are stored under low humidity refrigeration in 30- or 60-kg paper bags at 0–5 °C (32–41 °F). This aracha has yet to be refined at this stage, with a final firing taking place before blending, selection and packaging take place. The leaves in this state will be re-fired throughout the year as they are needed, giving the green teas a longer shelf-life and better flavor. The first flush tea of May will readily store in this fashion until the next year's harvest. After this re-drying process, each crude tea will be sifted and graded according to size. Finally, each lot will be blended according to the blending order by the tasters and packed for sale.
Grown under shade for three weeks prior to plucking, gyokuro is one of the most exclusive varieties of tea produced in Japan. The shading technique imparts a sweeter flavor, and produces a particularly rich color thanks to the higher amounts of chlorophyll in the shaded leaf. Gyokuro tea is associated with the Uji region, the first tea-growing region in Japan. It is often made using smaller-leaf cultivars of the tea plant.

We made our first donation to a school for farmworkers in September 2016. In March 2017, we partnered with an after school dance troupe for teenagers in the Clan William area of the Western Cape.
Dr Nortier cultivated the first plants at Clanwilliam on his farm Eastside and on the farm Klein Kliphuis. The tiny seeds were very difficult to come by. Dr Nortier paid the local villagers £5 per matchbox of seeds collected. An aged Khoi woman found an unusual seed source: having chanced upon ants dragging seed, she followed them back to their nest and, on breaking it open, found a granary. Dr. Nortier's research was ultimately successful and he subsequently showed all the local farmers how to germinate their own seeds. The secret lay in scarifying the seed pods. Dr Nortier placed a layer of seeds between two mill stones and ground away some of the seed pod wall. Thereafter the seeds were easily propagated. Over the next decade the price of seeds soared to an astounding £80 a pound, the most expensive vegetable seed in the world, as farmers rushed to plant rooibos. Today, the seed is gathered by special sifting processes. Dr Nortier is today accepted as the father of the rooibos tea industry. Thanks to his research, rooibos tea became an iconic national beverage and then a globalised commodity. Rooibos tea production is today the economic mainstay of the Clanwilliam district. In 1948 The University of Stellenbosch awarded Dr Nortier an Honorary Doctorate D.Sc (Agria) in recognition for his valuable contribution to South African agriculture.
Rooibos tea is anti-inflammatory in nature, which means that it reduces blood pressure and scavenges free radicals like other antioxidants. Quercetin, another powerful antioxidant found in rooibos tea, has been linked to preventing a wide variety of heart conditions. It promotes an increase in HDL cholesterol (good cholesterol) and inhibits the LDL cholesterol (bad cholesterol) from binding to the walls of arteries and blood vessels.
